Mexican Rice with Lime

Begin roasting the green chiles
- 2 green chiles
- 2 tablespoons cooking oil
- 1/4 cup onion, chopped
- 3 cloves of garlic, peeled and chopped
- 1 cup long grain white rice
- 16 oz chicken broth
- 8 oz tomato sauce
- 1/4 teaspoon salt
- 1 cup fresh tomatoes, seeded and diced
- 2 fresh limes (or 3 tablespoons lime juice)
- additional fresh limes (optional, for garnish

Preheat oven to 350°. Beat butter and sugar together in a large bowl; beat in eggs
- 1 cup butter, softened
- 1 1/2 cups sugar
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 (1-ounce) bottle red food coloring
- 1 teaspoon vinegar
- 2 1/2 cups cake flour or all-purpose flour
- 1 tablespoon cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 3 cups heavy whipping cream
- 1 cup powdered sugar
- 3 pints fresh strawberries, halved
- 2 cups fresh blueberries

Maple Syrup Fondue

Mix butter and flour to obtain kneaded butter
- 2 tablespoons of soft butter
- 2 tablespoons of white flour
- 1 cup of maple syrup
- 1 1/2 cups of 35% cream
- 125 g of cream cheese
- 1/4 cup of sliced, roasted almonds
- Fresh fruit of your choice
Blueberry Basil Bones-Dog Treats

In a food processor, pulse the blueberries and water into a fine purée
- 1 Cup Blueberries
- – 2 Teaspoons Water
- – 1 Tablespoon Basil (chopped)
- – 1 Cup Buckwheat Flour
- – 3/4 Cup Wheat Flour
Pumpkin Donuts with Chocolate Chips & Cinnamon and Sugar

- Pumpkin Donuts Recipe:
- 1/2 cup oil (we use coconut)
- 3 eggs
- 1 1/2 cups sugar
- 1 1/2 cups canned pumpkin
- 3/4 teaspoon ground cinnamon plus a heaping
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 1 3/4 cups + 2 tablespoons flour
- 1/2 to 1 cup mini chocolate chips
- Cinnamon/Sugar Topping:
- 1/8 cup sugar
- cinnamon to liking
Queen's Bread Pudding with Cold Fruit "Soup"

For the bread pudding: Grease a 2-quart baking dish with butter
- Bread Pudding:
- 1 tablespoon butter
- 4 cups leftover Danish or donuts, cut into 1/2-inch cubes
- 3 cups milk
- 1/2 cup dried apricots, chopped
- 1/2 cup chopped dried cranberries, craisins and/or sultanas (small seedless raisins)
- 1/4 cup amaretto, whiskey, or warm water
- 3 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- For the Fruit Soup:
- 1 cup fresh strawberries, cleaned
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries or boysenberries
- 1 banana, peeled
- 1 peach, peeled, pit removed, and sliced
- 1 lemon, juiced
- 1 pint vanilla frozen yogurt or vanilla ice cream, softened
- 6 sprigs fresh mint, for garnish

- 2 pounds thick cut steak, cut into 1/2-3/4” pieces
- 1 tablespoon extra virgin olive oil
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 1 1/2 cups Jack Daniels Whiskey*
- 3 (15.5 ounce) cans S&W Chili Beans
- 1 (15.5 ounce) can kidney beans, rinsed and drained
