Microwave Skinny Peach Cobbler with Blueberry Sauce

- 1/2 cup quick oats, milled
- 1/4 cup granola of choice (or rolled oats if you want to go cleaner)
- 1 egg white
- 2 tablespoons unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp honey
- 2 tbsp slivered almonds (pecans or almonds would work too)
- Pinch of salt
- 1 large fresh peach or about 1.5 cups frozen peaches
- 1/2 cup blueberries
- 2 tbsp water
- 2 packets splenda
- Optional: Greek yogurt to melt on top

Crush the vanilla wafers to make fine crumbs
- Homemade Vanilla Wafers:
- 1 12 oz.-box* vanilla wafers, crushed (or, make your own with our easy recipe)
- 2 Cups powdered sugar
- 1 6 oz.-can orange juice concentrate, thawed, undiluted (3/4 Cup if you are working from a bigger can)
- 1/2 tsp. PURE VANILLA EXTRACT
- 1/2 Cup butter (1 stick), softened
- 1 Cup walnuts or pecans, finely chopped
- 1-2 Cups sweetened coconut flakes (recipe called for 1 Cup, we ran out and needed 2)
- 1/3 Cup butter
- 1/2 Cup sugar
- 1 egg
- 1 tsp. milk
- 1 tsp. PURE VANILLA EXTRACT
- 1 Cup flour
- 1 tsp. baking powder
Turtle Cake - Cafe Latte

To prepare cake: Preheat oven to 350 degrees
- For cake:
- Butter and unsweetened cocoa powder for pans
- 1 egg, lightly beaten
- 1 c. buttermilk
- 2/3 c. vegetable oil
- 2 c. all-purpose flour
- 1 3/4 c. sugar
- 1/2 c. unsweetened cocoa powder
- 1 tbsp. baking soda
- 1 tsp. salt
- 1 c. freshly brewed hot coffee
- For chocolate frosting:
- 1 c. sugar
- 1/2 c. whole milk
- 6 tablespoons butter, cut into small pieces
- 1 12-oz. package (2 c.) semisweet chocolate pieces
- 1 to 2 tsp. freshly brewed hot coffee, optional
- 1 1/2 c. pecan halves, toasted
- 1/2 c. purchased caramel ice cream topping

- 1 cup raw, grated potatoes
- 1 cup leftover mashed potatoes
- 1 cup all-purpose flour
- 2 tsp baking powder

- 2 cups fresh figs (10-12 pieces) the dried figs can be used if you don't find the fresh ones
- 1 cup whole milk
- 3 cups heavy whipping cream
- 4 tbsp honey [can use 1/2 C honey and omit sugar]
- 1/4 cup sugar (or adjust to taste)
- 2 eggs (optional - you can use 2 tbsp cornflour and 3 tbsp condensed milk instead of eggs)
- 2 tbsp sherry (optional)
- 1 tbsp vanilla essence
- chopped nuts - for garnish [walnuts, almonds or cashews]
Pumpkin and Rice Dog Biscuits

Preheat oven to 350. In large bowl, whisk together eggs and pumpkin to smooth

- 1/2 cup canned pumpkin
- 2 1/2 cups brown rice flour*
- 1 teaspoon dried parsley (optional)
- Brown rice flour gives the biscuits crunch and promotes better dog digestion. Many dogs have touchy stomachs or allergies, and do not, like many people I know, tolerate wheat.

Meyer Lemon Sugar Scrub - Homemade

In a medium mixing bowl, simple stir all ingredient together until well blended
- Zest of 2 Meyer Lemons (you can substitute with regular lemon as well)
- 1 cup of granulated sugar
- 2 tablespoons of organic virgin coconut oil
