Cucumber & Black-Eyed Pea Salad

Whisk oil, lemon juice, oregano and pepper in a large bowl until combined
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons fresh oregano, chopped, or 1 teaspoon dried
- 4 cups cucumbers, peeled and diced
- 1 14-ounce can black-eyed peas, rinsed
- 2/3 cup red bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, slivered
- 2 tablespoons black olives, chopped
- Freshly ground pepper to taste
Chicken Pot Pie with Sweet Potato Crust

For Crust: In a large bowl, thoroughly combine the 1 1/2 cups flour, baking powder, salt and thyme
- For Crust:
- 1 1/2 1 1/2 1/2 to 3/4 flour, plus 1/2 to 3/4 cup more for dusting
- 1 1 1 teaspoon baking powder
- 1/2 1/2 1/2 teaspoon salt
- 1/4 1/4 1/4 teaspoon dried thyme
- 2 2 2 Tablespoons cold butter or margarine, cut into small pieces
- 1 1 3 15-ounce mashed sweet potatoes (from about 3 small roasted sweet potatoes, or one 15-ounce can, rinsed and drained)
- For Filling:
- 14 1/2-ounce 14 1/2-ounce One 14 1/2-ounce can low-sodium/low-fat chicken broth
- 1 1/2 1 1/2 1/2 cups whole or low-fat milk
- 1/2 1/2 1/2 cup all-purpose flour
- 1 1 1 Tablespoon butter or margarine
- 1 1 1 clove garlic, minced
- 1/2 1/2 1/2 teaspoon dried thyme
- 2 2 2 cups mixed frozen vegetables
- 3 1/2 3 1/2 1-inch 1 2 chicken, skin and bones removed, cut into 1-inch pieces (from 1 medium-size rotisserie chicken, approximately 2 pounds)

Layer your berries in an 8 x 8 x 2 inch baking dish sprayed with cooking spray
- Topping:
- 2 cups fresh blueberries (You can make this using all kinds of berries)
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 3 tablespoons cooking oil (I used Canola)
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 cup sugar
- 1 cup evaporated milk (could use regular milk)
- 1 tablespoon cornstarch
- 1/4 cup sugar
- 1 cup boiling water

Cinnamon Rolls with KitchenAid Mixer

Pour warm milk inside the KitchenAid Mixer bowl then add dry yeast and 4 teaspoons of sugar
- For the dough:
- 1 cup of warm whole milk (110F)
- 2 eggs at room temperature
- 1/3 cup of margarine (melted)
- 4 1/2 cups of bread flour (or more)
- 1 teaspoon of salt
- 1/2 cup of white sugar
- 2 1/2 teaspoons of dry yeast
- For the filling:
- 1 cup of brown sugar (packed)
- 2 1/2 tablespoons of ground cinnamon
- 1/3 cup of unsalted butter (soften)
- For the frosting:
- 1 1/2 cups of powdered sugar
- 3 oz of cream cheese (at room temperature)
- 1/4 cup of butter (at room temperature)
- 1/2 teaspoon of vanilla extract
- 1 small pinch of salt
- drops of water (enough to soften up the frosting)
Irish Cream Glaze

Dissolve coffee granules in water; add liqueur and powdered sugar, stirring until blended
- 1 teaspoon instant coffee granules
- 2 tablespoons water, boiling
- 1 1/2 tablespoons irish cream
- 2/3 cup powdered sugar
- 3 tablespoons sliced almonds, toasted

- 2 cups whole wheat flour
- 1 cup rolled oats
- 1 tablespoon dried parsley flakes (or 2 tbl fresh chopped parsley)

- 1/2 cup water (+2 more tablespoons if dough is too dry)
- 1/2 cup non-fat dry milk
- 1 cup peanut butter (unsalted)

- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips
- 1/2 cup milk
- 1/3 cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1/2 cup light brown sugar, packed
- 1 1/4 cups hot water
- 3 teaspoons instant espresso powder (optional, but highly recommended)
