Yankee Salad

A light and cool summer salad made with pasta and frozen whipped topping
- 1 (16 ounce) package uncooked orzo pasta
- 3/4 cup white sugar
- 2 eggs, beaten
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 2 (20 ounce) cans crushed pineapple, drained with juice reserved
- 1 cup mandarin orange segments, drained and chopped
- 1 (10 ounce) jar maraschino cherries, drained and chopped
- 1 (12 ounce) container frozen whipped topping, thawed
Cole Slaw With Beans and Bacon

Lightly mix together the first 6 ingredients
- 2 cups shredded cabbage
- 1/2 cup diced celery
- 1/3 cup diced onion
- 2 tablespoons chopped parsley
- 15 1/2 ounces red kidney beans, drained
- 4 slices crisply cooked bacon, crumbled
- 1 tablespoon vinegar
- 1/2 cup mayonnaise
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon sugar
Marzipan Easter Decorations

These Marzipan Easter eggs, flowers and butterflies are perfect for decorating cakes or muffins
- Green frosting
- Cooked mini cupcakes or cake
- 1-7 oz box Odense Marzipan
- Assorted colors of food coloring paste* or gel
- 2 teaspoons Just Whites (powdered egg whites)
- Small paintbrush
- Assorted sprinkles
- Assorted mini cookie cutters
- Food coloring paste is generally preferred over liquid, as it won't change the consistency of the Marzipan.

Yields 12 muffins
- Muffins:
- 4 large eggs, room temperature
- 1 cup cranberries, fresh or frozen (thawed if possible)
- 1/4 cup unrefined coconut oil, soft or melted
- 2 1/2 cups blanched almond flour
- 3 tablespoons xylitol
- 1 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon sea salt
- 1/2 teaspoon lemon zest, optional for a more lemony taste
- 2 tablespoons fresh lemon juice
- 2 teaspoons vanilla extract
- 1/2 teaspoon KAL liquid stevia
- Icing:
- 1/2-cup raw cashew pieces
- 1/4 cup coconut milk
- 2 tablespoon lemon juice
- 2 tablespoons unrefined coconut oil, soft or melted
- 2 teaspoons raw honey, optional
- 20-25 drops KAL liquid stevia, to taste
- 1/2 teaspoon lemon zest
Peanut Butter Oatmeal Chocolate Chip Cookies

Yield 24 cookies
- 1/2 cup butter ( 1 stick )
- 1/2 cup sugar
- 1/3 cup firmly packed brown sugar
- 1/2 cup peanut butter
- 1 large egg
- 1 teaspoon vanilla (or more)
- 1 cup unbleached all-purpose flour
- 1/2 cup oatmeal
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 (12 ounce) bag semi-sweet chocolate chips
Paleo Caramel Sauce

Makes approximately 1/3 cup of caramel
- 2 tablespoons water
- 1/4 cup raw coconut palm sugar
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract

Chopped Thai Chicken Salad

Bring a large pot of water to boil
- Salad:
- 2 boneless skinless chicken breasts
- 1 small head green or white cabbage (2 cups shredded)
- 1 large carrot (1 1/2 cups shredded)
- 1 green papaya (1 1/2 cups shredded)
- 1/2 cup fresh cilantro
- 1/2 cup green onions
- 1/2 cup chopped peanuts
- Dressing:
- 2 cloves garlic
- 3 bird’s eye chili peppers (sub 1/2 teaspoon minced hot pepper)
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
- 2 tablespoons sugar
- 1 tablespoon fresh lime juice
- 1 tablespoon oil
- 1/2 teaspoon fish sauce
- 1/4 cup peanut butter
- 1/4 cup water
Cherry Danish

- DRIZZLE:
- 3 extra large eggs, separated (reserving 1/2 of the yolks for filling)
- 1/4 tsp cream of tartar
- 1 tsp
- 1 tsp cherry extract (or other extract like lemon/strawberry/blueberry/almond)
- 3 TBS sour cream (or coconut cream if dairy free)
- 1/4 cup Jay Robb Straw
- FILLING:(or use 'Healthified' Custard)
- 4 oz cream cheese, softened (or coconut cream if dairy allergy)
- 1/2 of the egg yolks from above
- 1/2 tsp stevia
- 1 tsp cherry extract (or other like lemon/strawberry/blueberry/almond/raspberry)
- 1 oz cream cheese, softened
- 1 drop of stevia
- 1/4 tsp cherry extract (or other extract)berry OR Vanilla Egg White Protein or Whey Protein
Mushrooms –Olive Garden Stuffed

Preheat oven to 350 degrees F
- 2 lg. packages button mushrooms, washed
- 1 can chopped clams, drained
- 1/3 cup white or yellow onion, chopped
- 3/4 cup softened, but not melted butter (use real butter, not margarine)
- 3/4 cup fresh grated parmesan
- 3/4 cup fresh grated romano
- 1 1/2 cup mozzarella, finely shredded
- (Set aside 3/4 cup of cheese mixture for topping)
- 1 egg, large
- 1/2 carrot, chopped
- 1 1/2 cups seasoned Italian bread crumbs
- 2 cloves fresh, finely minced garlic
Meyer Lemon Pizzelles

- 1 3/4 cups granulated sugar
- 6 Large Eggs, room temp
- 2 Sticks of Butter, melted and cooled
- 3 teaspoons Vanilla Extract
- 1 teaspoon Pure Orange Extract
- Zest of 3 Meyer Lemons
- 4 teaspoons Baking Powder
- 4 cups All-Purpose Flour, spooned into measuring cup
