Chocolate Crazy Cake (No Eggs, Milk, Butter or Bowls)

Preheat oven to 350 degrees F
- 1 1/2 Cups flour (all-purpose)
- 3 Tbsp. cocoa (unsweetened)
- 1 Cup white sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. white vinegar
- 1 tsp. pure vanilla extract
- 5 Tbsp. vegetable oil
- 1 Cup water
Potato Gratin with Rosemary Crust

This gratin is awesome with prime rib or beef tenderloin
- 1 (14.1-oz.) package refrigerated piecrusts
- 1 tablespoon chopped fresh rosemary
- 1/4 teaspoon freshly ground pepper
- 2 cups (8 oz.) shredded Gruyère cheese, divided
- 1 1/2 pounds Yukon gold potatoes
- 1 1/2 pounds sweet potatoes
- 1 teaspoon kosher salt
- 2/3 cup heavy cream
- 1 garlic clove, minced
- Garnish: fresh rosemary sprigs
Basic Pie Dough

Makes 1 (10- to 11-inch) circle
- 1 1/2 cups all-purpose flour, plus more for dusting the work surface
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 6 ounces unsalted butter, cut into cubes and well chilled (1 1/2 sticks)
- 1/2 teaspoon lemon juice
- 4 to 6 tablespoons ice-cold water, as needed
Tommy Bahama's Pineapple Upside-Down Cheesecake

Cheesecake Combine cream cheese, sugar and the butter in mixer bowl
- Cheesecake
- 2 1/2 lb Cream Cheese, room temp
- 8 oz Granulated Sugar
- 2 oz Unsalted Butter
- 4 Whole Eggs
- 1 Cup Sour Cream
- 1 1/2 Tbsp Lemon Zest, chopped
- 1 1/2 Tbsp Pure Vanilla Extract
- 8 mini-springform pans, or use ramekins
- Caramelized Pineapple
- 2 Cups fresh Pineapple, diced, 1/2" (reserve the pineapple top for garnish)
- 1/2 Cup Light Brown Sugar
- 1/2 tsp Pure Vanilla Extract
- Pre-heat a sauce pan
- Carmel Sauce (Makes 2 1/2 Cups) Note: needs to be served immediately or reheated as it will harden
Carrabba's Mama Mandola's Chicken Soup

Dice celery, carrots, onion, potatoes and bell pepper into 1/4-inch pieces
- 5 celery ribs
- 4 medium carrots, peeled
- 1 large yellow onion
- 2 medium potatoes, peeled
- 1 large green bell pepper
- 1 (14 ounce) can Italian plum tomatoes
- 1 (5 lb) hen, washed and cut into 8 pieces or(substitute 3-4 chicken breasts)
- 1/2 cup fresh Italian parsley, chopped
- 2 garlic cloves, finely chopped
- 6 quarts water

Key Lime Meltaways

In the bowl of an electric mixer fitted with the whisk attachment, cream butter and 1/3 cup sugar until fluffy
- 12 Tbsps (1 1/2 sticks) unsalted butter, room temperature
- 1 c confectioners’ sugar
- Grated zest of 4 small key limes
- 2 Tbsp freshly squeezed lime juice
- 1 Tbsp pure vanilla extract
- 1 3/4 c plus 2 Tbsp all-purpose flour

- 1/2 cup whole milk
- One 1/4-ounce package active dry yeast
- 2 tablespoons granulated sugar
- 1/2 cup sour cream
- 1 large egg, lightly beaten
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon kosher salt
- 3 cups all-purpose flour, plus more for dusting
- 2 sticks unsalted butter, at room temperature
- Filling:
- 1 1/2 cups walnuts
- 3/4 cup all-purpose flour
- 1/2 cup packed dark brown sugar
- 1/2 cup pure maple syrup
- 1 stick unsalted butter, at room temperature, plus melted butter for brushing
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon kosher salt
- Turbinado sugar, for sprinkling

Black Bean and Quinoa Enchilada Bake

- 1 cup uncooked quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeds and ribs removed,diced
- 1 red pepper, seeds removed, diced
- 1 orange pepper, seeds removed, diced
- 1 cup corn frozen kernels
- Juice of 1 small lime
- 1 teaspoon ground cumin
- 1 tablespoon chili powder
- 1/3 cup chopped cilantro
- Salt and pepper, to taste
- 2 (15 oz) cans black beans, drained and rinsed
- 2 cups red enchilada sauce
- 2 cups shredded Mexican cheese
