Spicy Chicken Stew

Super Crock Pot Stew
- 2 baking potatoes (about 1 1/2 pounds), peeled and cut into chunks (no more than 3 1/3 cups)
- 1 (10-ounce) package frozen whole-kernel corn
- 2 celery stalks, chopped
- 2 carrots, peeled and cut into chunks (1 cup-4)
- 1 onion, cut into 1/2-inch-thick slices
- 2 garlic cloves, minced
- 1 cup bottled salsa
- 1 1/2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon freshly ground black pepper
- 1 pound skinless, boneless chicken breast
- 4 skinless, boneless chicken thighs (about 10.5 ounces)
- 2 1/2 cups fat-free, lower-sodium chicken broth
- 4 6" fresh corn tortillas cut into strips (I haven never done this)

- 1/4 cup(s) plain fat free yogurt (More of this than mayo)
- 1/4 cup(s) fat free mayonnaise (I used regular)
- 1/4 tsp ginger root
- 6 oz roasted skinless boneless chicken breast, cubed
- 2 medium uncooked scallion(s), chopped
- 1/4 cup(s) grapes, red, seedless, quartered
- 1/4 cup(s) uncooked celery, chopped
- 1/4 cup(s) uncooked carrot(s), grated
- 2 Tbsp chopped walnuts

- 8 oz uncooked jumbo pasta shells (about 24 shells from 12-oz box)

- 1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
