Braised Beef

One of Catherine's recipes that she sent to me in Arkansas when I was first married
- 3 tbs bacon far (I usually use cooking spray)
- 2 lbs stew beef (sirloin tips are great if on sale!)
- 3 lg onions sliced
- 1/4 tsp Worcestershire
- 3 tbs flour
- 1 tbs vinegar
- 2 tbs ketchup
- 1 tsp salt
- Braise beef on all sides
- Add onions - fry lightly
- Add remaining ingredients plus 2 cups boiling water
- Cover and simmer for 1 1/2 hours. Add additional water if necessary
- Serve with mashed potatoes (or rice - or noodles, but potatoes best)

- 2 cups sliced almonds, chopped (8 oz)
- 2 tbls all-purpose flour
- 2 tsp grated orange zest
- 3/4 cup sugar
- 1/2 cup butter (1 stick) cut in pieces
- 1/3 cup whipping cream
- 2 tbls honey
- 8 oz bittersweet or semisweet choc.chips

Chicken Noodle Soup

- Chicken Stock:
- 1 whole free-range chicken (about 3 1/2 pounds), rinsed, giblets discarded or combo of chicken thighs and breasts up to 2 lbs.
- 2 carrots, cut in large chunks
- 3 celery stalks, cut in large chunks
- 2 large white onions, quartered
- 1 head of garlic, halved
- 1 turnip, halved
- 1/4 bunch fresh thyme
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- SOUP
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 medium carrots, cut diagonally into 1/2-inch-thick slices
- 2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
- 4 fresh thyme sprigs
- 1 bay leaf
- 2 quarts chicken stock, recipe follows
- 8 ounces dried wide egg noodles
- 1 1/2 cups shredded cooked chicken
- Kosher salt and freshly ground black pepper
- 1 handful fresh flat-leaf parsley, finely chopped

- Required amount of chicken or beef for event. I usually have at least 3 lbs of chicken or a 3 lb eye of round (thinly sliced).

Festive Coconut Macaroons

Heat oven to 325 Grease and lightly flour cookie sheets (I used paper) In large bowl eat egg whites until foamy
- 4 egg whites
- 2/3 cup sugar
- 1/4 cup flour
- 1/8 tsp salt
- 1/2 tsp almond extract
- 4 cups coconut
- 1/4 cup chopped red candied cherries
- 1/4 cup chopped green candied cherries
- (found them with nuts and other dried fruits at Shaws)
