Wheat Berry Chili

- 3 cups water
- 2 tbl vegetable or olive oil
- 1 med onion diced
- 4 cloves garlic minced
- 1 lb lean ground meat (turkey or beef)
- 2 15-ounce or 1 28-ounce can diced tomatoes in puree, undrained (I used Pastene Kitchen Ready
- 1 pkg Chili Seasoning
- 1 12-ounce carton beef broth
- Salt and Pepper to taste
- 1/2 carton Grape tomatoes
- Diced peppers
- Red Hot Sauce
Cauliflower Mac & Cheese

- 1/2 cup almond milk (I use Fat Free Milk)
- 2 cups low fat cheddar cheese
- 1/4 tsp garlic powder

Beet Salad with Dijon Vinaigrette and Mozzarella

Beet Salad with Mozzarella
- 3 large (or 4 small) beets — you can use any color or a mix
- olive oil
- 3 balls of Burrata mozzarella — one for each diner
- 1 large heirloom tomato
- 4 pieces of basil
- 1 tablespoon vinegar — try pomegranate for a special treat (Red wine works, too!)
- 3 tablespoons grape seed oil (or other neutral oil)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon sugar
- salt and pepper to taste
Grilled Vegetable Platter

Really exceptional
- 1/4 C olive oil
- 2 tbl honey
- 1 tbl plus 1/2 tsp balsamic vinegar (divided)
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1 lb fresh asparagus, trimmed
- 3 small carrots, cut in half lengthwise
- 1 large sweet red pepper cut into 1-inch strips
- 1 med yellow summer squash cut into 1/2 inch slices
- 1 med red onion cut in wedges
- 1/8 tsp pepper

Pork Chops Sorrento

Old recipe made when kids were little - excellent
- 6 pork blade, rib, loin, or sirloin chops - 3/4 inch thick
- 1 8-ounce can tomato sauce with mushrooms
- 1 small green pepper, cut into 1/3-inch strips
- 1/2 tsp oregano leaves
- 1 8-ounce package mozzarella cheese, cut into 6 slices
