Baked Potato Soup

This is a great crockpot meal
- garnish:
- 5 russet potatoes, peeled and cut in 1 inch cubes
- 4 cups chicken broth
- 1 bottle dark beer
- 1 medium onion, chopped
- 4-5 garlic, minced
- 1 tbls salt and pepper
- 6 tbls butter
- 1/3 cup flour
- 2 cups cream
- 1/2 cup sour cream
- bacon
- cheese
- green onions
- tomatoes
- sour cream
- anything else you like on your baked potato
Ratatouille's Ratatouille

I found this recipe on line at the request of my daughter
- 1/2 onion, finely chopped
- 2 garlic cloves, very thinly sliced
- 1 cup tomato puree (such as Pomi)
- 2 tablespoons olive oil, divided
- 1 small eggplant (my store sells these “Italian Eggplant” that are less than half the size of regular ones; it worked perfectly)
- 1 smallish zucchini
- 1 smallish yellow squash
- 1 longish red bell pepper
- Few sprigs fresh thyme
- Salt and pepper
- Few tablespoons soft goat cheese, for serving

- 1 cup peanut butter
- 1 cup sugar

Asian Kale Slaw with Ginger Peanut Dressing

Preheat the oven to 350°F
- 4 cups chopped curly kale, thick stems removed (be sure it's dry)
- 3 cups prepared shredded red cabbage
- 2 cups prepared shredded carrots
- 1 red bell pepper, sliced into bite-sized pieces
- 3/4 cup slivered almonds
- 1/2 cup chopped fresh cilantro
- 3 tablespoons creamy peanut butter
- 3 tablespoons unseasoned rice vinegar
- 1 tablespoon fresh lime juice, from one lime
- 3 tablespoons vegetable oil
- 1 tablespoon soy sauce (use gluten-free if needed)
- 2 tablespoons honey
- 2 tablespoon brown sugar
- 2 large clove garlic, roughly chopped
- 1-inch square piece fresh ginger, peeled and roughly chopped
- 1 teaspoon fish sauce
- 1/2 teaspoon sriracha
- 1/2 teaspoon Asian sesame oil
Bloody Mary Green Bean Salad

Lemony with a touch of lavender flavoring to the glaze makes this tea cake lovely for a brunch
- 1/2 cup butter, at room temperature
- 3/4 cup white granulated sugar
- 3/4 cup blanched almonds
- 3 egg yolks
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 teaspoons lemon zest
- 1/2 cup cake flour
- 1 teaspoon baking powder
- LAVENDER LEMON GLAZE
- 2 1/2 tablespoons freshly squeezed lemon juice

Avocado-Tomatillo Salsa

Recipe copied from Sunset magazine, March 2015 A great twist on a salsa verde recipe!!
- 1 lb tomatillos, stemmed and halved
- 1/4 red onion, sliced
- 1 jalapeno chile, stemmed, halved and seeded
- 3-4 garlic cloves
- 1 ripe avocado, pitted and peeled
- 1 cup cilantro leaves and tender stems
- Juice of 1 lime
- salt and pepper to taste
Jeanelle's Crockpot Beans

Put all ingredients in crockpot
- 1 lb bacon, cooked and crumbled
- 1-2 lbs ground beef, cooked
- 2 cans kidney beans
- 2 cans pork and beans
- 1 can hominy
- 1 can lima (butter) beans
- 1 can black beans
- onion, chopped
- 1/2 cup molasses
- 1/4 -1/2 cup brown sugar
- 3 Tbsp white vinegar
- 1 cup ketchup
- 1 good squirt mustard
- 3-4 tsp liquid smoke

- 1 part cointreau
- 1 part lime juice
- 4 parts pomegranite juice
