  • garnish:
  • 5 russet potatoes, peeled and cut in 1 inch cubes
  • 4 cups chicken broth
  • 1 bottle dark beer
  • 1 medium onion, chopped
  • 4-5 garlic, minced
  • 1 tbls salt and pepper
  • 6 tbls butter
  • 1/3 cup flour
  • 2 cups cream
  • 1/2 cup sour cream
  • bacon
  • cheese
  • green onions
  • tomatoes
  • sour cream
  • anything else you like on your baked potato

I found this recipe on line at the request of my daughter

  • 1/2 onion, finely chopped
  • 2 garlic cloves, very thinly sliced
  • 1 cup tomato puree (such as Pomi)
  • 2 tablespoons olive oil, divided
  • 1 small eggplant (my store sells these “Italian Eggplant” that are less than half the size of regular ones; it worked perfectly)
  • 1 smallish zucchini
  • 1 smallish yellow squash
  • 1 longish red bell pepper
  • Few sprigs fresh thyme
  • Salt and pepper
  • Few tablespoons soft goat cheese, for serving
