Honey Mango Salsa

combine all ingredients in a bowl and toss gently
- 1 honey mango
- 1 shallot, finely diced
- 1/4 cup fresh cilantro, finely chopped
- 3 tbsp lime
- 1 tbsp brown sugar
- 2 jalapeño peppers, seeded and chopped
- 2 tsp fresh ginger, minced
- fresh ground pepper and salt, to taste
Apple Crisp

This is a great apple crisp if you are one to not like things too sweet
- 6 golden delicious apples (about 3 pounds) - peeled, cored and cut into 1/4 in sliceds
- 1/4 c. honey
- 1/2 cup chopped pecans
- zest and juice of 1 lime
- 3/4 cup all-purpose flour
- 1/2 cup light brown sugar
- 3 Tbls unsalted butter, chilled and cut into small pieces
Gallo Pinto (Costa Rican Beans and Rice)

InstructionsHeat oil in a large skillet over medium-high heat until shimmering
- 2 tablespoons light-tasting oil (vegetable, mild olive, canola)
- 1 red bell pepper , chopped
- 1 small yellow onion , chopped
- 2 cloves garlic , minced
- 2 cups cooked black beans , in 3/4 cup reserved cooking liquid*
- 1 /4 cup Salsa Lizano **
- 3 cups cooked rice , preferably, day-old and refrigerated
- 1 /4 cup chopped fresh cilantro

Tahini Chicken with Bok Choy and Mango Salad

- Optional:
- 3 Tbsp tahini
- 4 tsp honey
- 4 skinless, boneless chicken thighs
- 1 Tbsp canola oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp toasted sesame oil
- 2 Tbsp seasoned rice vinegar
- 1 Tbsp soy sauce
- 4 cups sliced bok choy
- 2 cups sliced red cabbage
- 1 1/2 cups chopped peeled mango
- fresh cilantro leaves
- pea pods, cucumbers, tomatoes, pomegranate seeds, toasted sliced almonds
Sausage and Tortellini Soup

This Tortellini Soup is so delicious and flavorful
- 2 tablespoon of olive oil
- 1/2 of a large onion, diced
- 2 medium carrots, peeled and diced
- 3 cloves of garlic, minced
- 1/2 cup pesto
- 1 teaspoon of salt and freshly ground black pepper to taste
- 19 oz Hot Italian Turkey Sausage, casings removed
- 1 quart low-sodium chicken broth
- 1 28 oz can of crushed tomatoes
- 1 12 oz can diced tomatoes
- 1 9oz package of fresh cheese tortellini
- 4 cups of baby spinach
- grated Romano cheese
Zucchini noodle shrimp "pasta'

My birthday has always been… interesting
- For the shrimp:
- 1 can artichoke hearts, drained
- 1 tbsp olive oil + more to drizzle
- salt and pepper + 1/2 tsp garlic powder
- 1 garlic clove, minced
- 1/4 tsp red pepper flakes
- 1/3 cup diced red onion
- 1 14-oz can of diced tomatoes, no salt added
- 1 tsp dried oregano
- 2 tbsp fresh basil, chopped
- 2 large zucchinis, Blade C
- 1 cup cannellini beans, rinsed and patted dry
- 6-8 medium shrimp
- salt and pepper, to taste
- 1/2 tsp garlic powder
