Creamy Winter Greens Gratin

You can make this gratin with your choice of spinach, Swiss chard, kale, or broccoli raab
- 2 Tbs. unsalted butter
- 1/2 cup fresh breadcrumbs
- Kosher salt and freshly ground black pepper
- 1 cup heavy cream
- 2 cloves garlic, smashed and peeled
- 2-1/2 oz. bacon (about 3 strips) or 1-1/2 oz. thinly sliced pancetta
- 2 cups cooked winter greens (spinach, Swiss chard, kale, or broccoli raab)
- 1/3 cup freshly grated Parmigiano Reggiano, or a combination of Parmigiano and another hard cheese like Gruyère, Emmental, or aged Gouda
Meatball Panini

Preheat a grill or panini maker
- 1 large red onion, peeled, cut into eight 1/4- to 1/2-inch-thick rounds
- 2 tablespoons extra-virgin olive oil, plus extra for drizzling
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 ciabatta rolls, halved horizontally
- 1 cup jarred tomato-basil sauce, such as Giada De Laurentiis for Target
- 1 teaspoon red pepper flakes, optional
- 1 1/3 cups arugula
- 12 Classic Italian Turkey Meatballs, recipe follows, halved
- 8 thin slices prosciutto, each about 6- by- 3-inches
- Eight 1/4-inch-thick slices provolone
- 1 cup plain breadcrumbs
- 1/2 cup finely grated Parmesan
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh Italian parsley
- 1/4 cup whole milk, at room temperature
- 1 tablespoon tomato paste
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 large eggs, at room temperature
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 pound ground dark turkey meat
- 1 pound spicy Italian turkey sausage links, casings removed

- 1 lg onion
- 5 cloves garlic
- 1 grannt smith apple
- 1/4 c. butter
- 4 c. chicken broth
- 4 Tbls. flour
- 3 Tbls. curry
- 1 tomato
- 2 c. half and half
- 1 lb. crab, scallops shrimp
CREAMY WHITE BEAN AND CHORIZO SOUP

Place beans in heavy large saucepan
- 1 pound dried cannellini or Great Northern beans (generous 2 cups)
- 8 cups water
- 3 tablespoons extra-virgin olive oil, divided
- 3 garlic cloves; 1 smashed, 2 chopped
- 1 large fresh rosemary sprig
- 1 bay leaf
- 1 large onion, coarsely chopped (about 2 cups)
- 1 large carrot, coarsely chopped (about 1 cup)
- 1 large celery stalk, coarsely chopped (about 3/4 cup)
- 2 1/2 teaspoons finely chopped fresh thyme, divided
- 4 cups (or more) low-salt chicken broth
- 1 pound fresh chorizo link sausages, casings removed
- 1/4 cup whipping cream

- 1 pound Italian Sausage, I like ground but you can use link.
- 2 tablespoons olive oil
- 3 to 4 red potatoes, cubed
- 1 onion, chopped
- 3 to 4 cloves garlic, minced
- 1 tablespoon rosemary, minced
- 1/4 cup pesto
- 5 cups chicken broth
- 6 pieces bacon, fried and chopped
- 2 cans cannellini beans, drained and rinsed
- 1 cup chopped kale or swiss chard
- 1 1/2 cups whipping cream
- 3 tablespoons flour
- 4 Roma tomatoes, chopped
- Salt & pepper, to taste

- 3 cups edamame, shelled
- 2 Tbsp olive oil, divided
- 1/2 cup sour cream
- 2 Tbsp chopped fresh cilantro
- 1 tsp lime zest
- 2 Tbsp lime juice
- 8 oz. prosciutto, fried til crisp and roughly chopped
- 2 jalapeno chiles, minced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced in cubes
- 1 bell pepper, chopped into 1/2 inch pieces (I prefer orange, but whatever color you choose.)
