Banana Pancakes

"Crowd pleasing banana pancakes made from scratch
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 1 tsp vanilla
- 2 tablespoons vegetable oil
- 2 ripe bananas, mashed
BROCCOLI SALAD NORTHWEST STYLE

combine ingredients. Cover with dressing
- dressing:
- 3-4 flourrets broccoli
- 1/2 cup cubed cheddar cheese
- 1/2 cup golden raisins
- 1/4 cup frozen peas
- 3-4 Tbls. chopped red onion or shallots
- 1/4 cup chopped pecans
- 1/2 chopped red pepper or more
- 5-6 pieces bacon, fried crisp and crumbled
- 1 cup mayonnaise
- 1 Tbls. sugar
- 2 Tbls. cider vinegar
Fish Tacos

To fry the fish: fill a large heavy bottomed pot about 1/3 full of peanut oil

- 2 cups panko bread crumbs (available in asian section of market)
- 3 eggs
- kosher salt and freshly ground black pepper
- 2 pounds halibut, snapper, or other firm flesh white fish (we use talapia)
- 8 corn tortillas
- 1/2 head napa cabbage, shredded
- Pink Chili Mayo, recipe follows
- lime wedges for garnish
- 1 1/2 cups mayo
- 1 1/2 cups sour cream
- 2 canned chipotle peppers in adobo sauce
- juice 1/2 lime
- kosher salt and freshly ground pepper
Tortilla Soup

Preheat oven to 350°F. Brush 1 side of tortillas with oil; cut in half
- 4 5- to 6-inch diameter corn tortillas
- 2 teaspoons olive oil
- 4 cups chicken broth
- 1 can Mexican-style stewed tomatoes with juices
- 1 bay leaf
- 3 garlic clove, minced
- 1 medium onion chopped
- 1/4 teaspoon ground cumin
- 1/8 teaspoon dried crushed red pepper
- 1 14 oz. can black beans
- 1 14oz. can of mexican corn
- 12 ounces skinless boneless chicken breast halves, boiled and shredded
- 2 green onions, sliced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- chopped jalepenos
- sour cream
- guacamole
- chili powder

Heat oil in skillet over medium high heat
- 1 Tbls Olive oil
- 1/3 cup olive oil for dressing
- 4 chicken breasts
- 1 tsp. salt
- 1/2 tsp ground pepper
- 1 clove garlic, or more
- 1 shallot, minced
- 1/2 cup sun dried tomatoes in oil, drained and chopped
- 1/2 cup fresh basil, chopped
- 12 oz. baby spinach leaves
- 1 large avocado, thinly sliced
Hot Surimi salad

- 1 lb imitation crab meat or real
- 4 oz. shredded mozzarella cheese
- 4 oz shredded sharp cheddar cheese
- 2 Tbls Parmesan cheese
- 3-4 chopped onions, chopped
- 3/4 chp mayonaise

- 2 Tbls lime juice
