Black Bean Quinoa Salad

In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside
- For the orange vinaigrette:
- 1 cup quinoa
- 2 large navel oranges, cut into segments
- 1 red bell pepper, diced
- 1 jalapeno, seeded and diced
- 1 cup canned black beans, drained and rinsed
- 1/2 cup canned corn kernels, drained
- 1/3 cup chopped red onion
- 2 tablespoons chopped fresh cilantro leaves
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup freshly squeezed orange juice
- Zest of 1 orange
- 1 tablespoon sugar
Loaded Baked Potato and Buffalo Chicken Casserole

Preheat oven to 400F Spray a 9-by-13-inch baking dish with cooking spray and set aside
- 6 medium potatoes cut into cubes (skin on)
- 1/3 cup oil (olive or vegetable)
- 1/2 teaspoon salt
- 1/2 tablespoon fresh ground pepper
- 1 tablespoon paprika
- 2 tablespoons garlic powder
- 5 tablespoons hot sauce
- 4 boneless skinless chicken breasts, cut into 1/2-inch cubes
- 2 cups shredded cheese (Mexican blend, cheddar, whatever you have on hand works!)
- 1/2 package (7 strips)Bacon, cooked and crumbled
- 1/2 cup diced green onion
Homemade Dry Ranch Dressing

Whisk all ingredients together until blended
- 1/3 cup dry buttermilk (**see note below**)
- 2 Tbsp. dried parsley
- 1 1/2 tsp. dried dill weed
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. dried onion flakes
- 1 tsp. ground black pepper
- 1 tsp. dried chives
- 1 tsp. salt
Pork Carnitas

1. Adjust oven rack to lower middle position and heat to 300 degrees
- 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes
- 1 1/2 teaspoon salt
- 3/4 teaspoon pepper
- 1 teaspoon ground cumin
- 1 onion, peeled and halved
- 2 bay leaves
- 1 teaspoon dried oregano
- 2 tablespoon fresh lime juice
- 2 cups water
- 1 medium orange, juiced and keep the spent halves

Preheat oven to 425ºF. Line a baking sheet with parchment paper or a non-stick baking mat
- 3 cups all-purpose flour
- 1 1/2 tsp salt
- 1 tbsp sugar

- 1 egg, beaten
- 1/4 cup shortening

- 1 stick cold or frozen butter, cubed

- 3/4 cup cocoa powder
- 1 1/4 cups water
- 1 1/2 cups sugar
- 1 1/2 teaspoons vanilla extract

- 3 c. flour
- 1/4 tsp.salt
- 1 c. sugar
- 4 tsp. baking powder
- 1 1/2 c. milk
- 2 eggs
- 2 tsp. vanilla
- 1/2 c. butter, melted
- Topping:
- 1 c. butter, softened
- 1 c. brown sugar
- 2 Tbsp. flour
- 1 Tbsp. cinnamon
- Glaze:
- 2 c. powdered sugar
- 5 Tbsp. milk ----- I used 3 Tbsp. of milk, 5 will make it too runny
- 1 tsp. vanilla
