Cream Cheese Carrot Cake Muffins

- Muffins:
- one 8-ounce package cream cheese or Neufchâtel cheese
- 1/4 cup granulated sugar
- a few drops of Fiori Di Sicilia flavor, optional but very tasty
- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, firmly packed
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground ginger
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup water
- 1/3 cup vegetable oil
- 1 cup grated carrots, lightly packed; about 2 medium-large carrots
Cream of Cauliflower Soup

I adapted this Cream of Cauliflower Soup recipe from "Pioneer Woman Cooks"
- 1 stick butter
- 1/2 onion, finely diced
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 1 to 2 heads cauliflower, roughly chopped
- 2 tablespoons chopped fresh or dried parsley (or fresh thyme)
- 2 quarts low-sodium chicken broth or stock, preferably homemade
- 2 cups whole milk
- 6 tablespoons flour
- 1 cup half & half (I used equal parts 1% milk and half and half)
- 2 to 4 teaspoons salt, to taste (I also added 1/8 tsp of white pepper)
- 1 generous cup sour cream, at room temperature (I used light)

1) Preheat oven to 375 degrees F
- 4 ripe but firm Bartlet pears
- 1/2 cup + 1 tablespoon granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1-1/2 cups heavy cream
- Optional: 1 tablespoon pear liqueur
- 6 tablespoons all-purpose flour, sifted
- 2 teaspoons ground cinnamon
Asian Green Beans

This is a really simple recipe to make
- 1 1/2 pounds fresh green beans, ends trimmed (frozen doesn't work as well)
- 2 tablespoons fresh garlic, chopped (or to taste)
- 1/4 teaspoon crushed red pepper flakes (optional or adjust to taste)
- NOTE: Chili Garlic Sauce makes a fast substitute for chopping garlic and adds some kick to it; I use 1 teaspoon of it.
- 1 1/2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 1 1/2 tablespoons rice vinegar
- 1 tablespoon brown sugar, packed (can use a little more if desired)
- Black pepper
- Salt (optional)
- Cornstarch (mixed with cold water to thicken sauce)
- Sliced almonds or sesame seed
Swedish Visiting Cake (adapted from Baking, From My Home to Yours)

- 1 cup sugar, plus extra for sprinkling
- Grated zest of 1 lemon
- 2 large eggs
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- 1 cup all-purpose flour
- 1 stick (8 tablespoons) unsalted butter, melted and cooled
- 1/4 About 1/4 cup sliced almonds (blanched or not)
Pie Crust from King Arthur Flour

We figure we cant repeat too often our formula for the flakiest, most tender pie crust so here it is
- 1 1/2 cups (6 1/2 ounces) Perfect Pastry Blend or King Arthur Unbleached All-Purpose Flour
- 1 tablespoon (1/8 ounce) buttermilk powder, optional
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder, optional
- 1/4 cup (1/2 stick, 4 tablespoons) butter
- 1/4 cup (1 1/2 ounces) vegetable shortening
- 1 teaspoon white or cider vinegar
- 3 to 5 tablespoons (1 1/2 to 2 1/2 ounces) ice water
Pinto Beans Cowgirl Style

While I keep canned beans in my pantry for emergencies, I much prefer to soak and cook my own beans
- 4 cups pinto beans (soaked in water, overnight)
- 4 slices of thick cut bacon (or ham hock, or salt pork or ham)
- 1 hamhock, optional (I had one in the freezer, so I added with bacon...we love the flavor)
- 3 to 4 garlic cloves, finely minced (this is my own personal touch)
- 1 to 2 onions, finely chopped (I love them, so in they went)
- Seasonings (after beans cooked, and to taste)
- 1 teaspoon of salt
- 2 teaspoons of ground black pepper
- Dash of hot sauce (we love it)
- 1 tablespoon cumin, optional (I love it, so I added that)
Tagliarelle with Truffle Butter

This makes a delicious side dish, but if you're counting calories or cholesterol-- eat a small bite and serve this
- Kosher salt
- 1/2 cup heavy cream
- 3 ounces white truffle butter (see note)
- Freshly ground black pepper
- 1 (8.82-ounce) package Cipriani tagliarelle dried pasta or other egg fettuccine
- 3 tablespoons fresh chives, chopped
- 3 ounces Parmesan, shaved thin with a vegetable peeler

- 1 1/2 cups ricotta cheese (12 ounces)
- 2 cups milk
- 6 large eggs, separated
- 1/2 cup sugar
- 2 cups cake flour
- 1/2 cup fine yellow cornmeal
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 stick (4 ounces) unsalted butter, melted, plus more for serving
- Pure maple syrup, for serving
- Crisp bacon strips, for serving
Budget Lemon "Saffron" Rice

- 2 cups water or chicken stock (or half of each)
