Easy Black Beans

You can soak and cook black beans, according to package directions
- OPTIONAL GARNISH:
- 1 can black beans, drained with 1/4 cup of juice reserved
- 1/4 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- Dollop sour cream
- Fresh cilantro
- Fresh lime juice

- 1 – 15 oz can pure pumpkin puree (not pie filling)
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tablespoon pure vanilla
- 1/4 cup light brown sugar, packed

- 2 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- NOTE: I used 2 teaspoons of Pumpkin Pie Spice instead of the cinnamon, ginger and nutmeg measurements
- 1 teaspoon baking powder

- 2 teaspoons natural (not Dutch) cocoa powder

- 1 cup Unbleached Pastry flour or 7/8 1 cup Unbleached All-Purpose Flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/8 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 3 tablespoons dried buttermilk powder*
- 2 large eggs
- 3 tablespoons vegetable oil
- 2 tablespoons water
- If you don't have buttermilk powder on hand, substitute 2 tablespoons buttermilk or yogurt for the water-- and I used 1% buttermilk.

- (just pulse whole or sliced almonds in a food processor)

- 1/2 * 1/2 cup white wine (whatever you like to drink)
- 1/4 * 1/4 cup freshly squeezed orange juice
- 8 * 8 tablespoons cold unsalted butter (cut into 8 pieces)
