Basic Hollandaise Sauce

1. To clarify the butter, melt it slowly in a saucepan
- 1 pound butter
- 5 egg yolks
- 1/4 teaspoon salt
- pinch white pepper
- 2 tablespoons lemon juice
Classic Potato Salad (adapted for pressure cooking)

I've been making this classic American potato salad for many years, but have never written it out as a recipe
- PRESSURE COOKER:
- 6 medium russet potatoes, peeled and cubed
- 1 1/2 cups water
- 4 large eggs
- SALAD DRESSING:
- 6 to 8 scallions, sliced (or1/4 cup finely chopped red onion)
- 1 cup mayonnaise
- 1 dill pickle wedge, diced (optional)
- 1 teaspoon sugar
- 2 tablespoons yellow mustard (or grain mustard)
- 2 tablespoons white wine vinegar (can use red or cider)
- Salt and pepper, to taste
- 2 celery stalks, sliced thin (optional, but adds a nice texture)
- 1/4 cup sliced black olives (optional, but I love it)
- 1/4 cup sliced radishes (optional, but adds a nice crunch)
- Paprika for garnish

Tomatoes and Basil are a perfect match, and pasta is one of my favorite fast dinners to make, at home
- 12 ounces linguine
- 12 ounces cherry or grape tomatoes, halved or quartered if large.
- 1 onion, thinly sliced
- 4 garlic cloves, thinly sliced
- 1/2 teaspoon red-pepper flakes (cut to 1/2 if you don't like any kind of heat, but don't leave out as this adds flavor)
- 2 sprigs basil, plus torn leaves for garnish
- 2 tablespoons extra-virgin olive oil, plus more for serving
- Coarse salt and freshly ground pepper
- 4 1/2 cups water
- Parmigiano-Reggiano, freshly grated
Whirly Pop Kettle Corn

- 3 tablespoons oil, like coconut oil, canola oil, or other vegetable oil

1) To make lemon sugar: Combine 1/2 cup sugar with 1 teaspoon lemon zest in the bowl of a mini-food processor
- 2 cups sugar, divided use
- Zest of 2 large lemons, divided use
- 1 cup butter, softened
- 2 large eggs, at room temperature
- 1 to 2 teaspoon lemon extract
- 1 tablespoon lemon juice
- 2-3/4 cups all-purpose flour
- 1/4 teaspoon salt
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
Braised Beef Short Ribs

Short Ribs are one of my favorite cuts of meat for slow braising
- 3 1/2 pounds boneless short ribs*, trimmed of excess fat (see note and technique below)
- Kosher salt and ground black pepper
- 2 tablespoons vegetable oil
- 2 large onions, peeled and sliced thin from pole to pole (about 4 cups)
- 1 tablespoon tomato paste
- 6 medium garlic cloves, peeled
- 2 cups red wine (I used Cabernet Sauvignon, see note)
- 1 cup beef broth
- 4 large carrots, peeled and cut crosswise into 2-inch pieces
- 4 sprigs fresh thyme
- 1 bay leaf
- 1/4 cup cold water
- Note: Make sure that the ribs are at least 4-inches long and 1-inch thick. If boneless ribs are unavailable, substitute 7 pounds of bone-in beef short ribs at least 4-inches long with 1-inch of meat above the bone.
- 1/2 teaspoon unflavored powdered gelatin
- NOTE: Recommended, bold red wine such as Cabernet Sauvignon or Côtes du Rhône
Sour Cream Pound Cake

This cake is sweet and light and the perfect texture
- 2 stick butter, at room temp (do not substitute)
- 6 eggs, room temp
- 8 oz sour cream, room temp
- 3 cups sugar
- 3 cups flour
- ¼ teaspoon baking soda
- 1 ½ teaspoons vanilla
- ½ teaspoon almond extract (optional)
Ruby Red Grapefruit Sorbet

This sorbet is very simple, wonderful palate cleanser and a really refreshing dessert
- 2 large ruby grapefruits, juiced, or 1 1/2 cups pink grapefruit juice
- 1 teaspoon grapefruit zest
- 1/2 cup water

- 1 tablespoon vodka
- 1 teaspoon grenadine (optional)

- 1/2 cup packed brown sugar

- MUFFINS:
- 2 cup flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Dash salt
- 2 eggs, beaten well
- 1 cup applesauce
- 1/2 cup canola oil
- 1 teaspoon vanilla
Turkey Sausage, Sweet Potato & Sage Hand Pies (Pasties)

I developed this recipe to be my American version of Cornish Pasties
- CRUST:
- 3 3 3 cups all purpose flour, plus extra for rolling the dough
- 4 4 4 ounces shortening or lard
- 4 4 4 ounces (1-stick) unsalted butter, cut into small pieces
- Pinch Pinch of salt
- 3/4 3/4 3/4 cup ice water
- FILLING:
- 1 1 bag 1 (9-ounces) bag Jimmy Dean fully-cooked turkey sausage crumbles
- 1 1 1-cup) small white or yellow onion, finely minced (about 1-cup)
- 1 1 1 cup diced sweet potato, cut into even small pieces
- 2 2 2 tablespoons fresh sage***, finely chopped
- 2 2 2 teaspoons fresh rosemary, finely chopped
- 2 2 2 teaspoons coarse salt
- 1 1 1 teaspoon coarse black pepper
- 2 2 2 teaspoons pure olive oil
- 1 1 1 cup dried cranberries, divided
- 1 1 1 egg & water (for the egg wash)
- to can skip making the dough, and buy a refrigerate pie crust dough. However, I think this dough recipe is very easy to make and taste a whole lot better!
