Thai Beef Tacos

Sprinkle flank steak with salt and pepper
- 1 1/2 pounds flank steak
- 1 teaspoon salt
- 1 teaspoon pepper
- marinade
- 3/4 cup light (canned) coconut milk
- 1 tablespoon sesame oil
- 4 garlic cloves, minced or pressed
- 2 teaspoons freshly grated ginger
- 2 tablespoons brown sugar
- 3 tablespoons freshly chopped cilantro
- 1/3 cup sweet chili sauce
- quick mango salsa
- 1/2 mango, chopped
- 1 shallot, diced
- 1 jalapeno, diced
- 2 tablespoons freshly chopped cilantro
- a sprinkle each of sugar, salt & pepper
- tacos
- 1 teaspoon canola oil
- 8-10 corn tortillas
- 1/2 cup sweet chili sauce
- 1/4 cup peanuts, chopped
- green leaf or romaine + fresh cilantro for topping
Pumpkin Blackbean Soup

I first started to make a simple savory pumpkin soup, with a little cumin and about 1/2 cup of coconut milk
- 1 Tbsp olive oil
- 1 small onion, diced
- 1 clove garlic, finely minced
- 2 cups pumpkin puree
- 1 can black beans, drained and rinsed
- 1 tsp. cumin
- 1/8 tsp cayenne
- 4 cup chicken stock (or vegetable stock)
- 1 cup half & half
- 1/4 cup creme fraiche (or sour cream)
- 1 can mild green chiles (reduce by half, if you don't want it as spicy
- 1 cup coconut milk (optional)
- 1 Tbsp fresh lime juice (or lemon)
- cilantro, as a garnish
Simple, Perfect Chili con Carne

I've been making chili con carne for years, and my own recipe is really good
- 2 pounds ground beef
- 2 cloves garlic, chopped
- One 8-ounce can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup masa harina*
- One 15-ounce can kidney beans, drained and rinsed
- One 15-ounce can pinto beans, drained and rinsed
- Shredded Cheddar, for serving
- Chopped onions, for serving
- Tortilla chips, for serving
- Lime wedges, for serving
- corn flour, found in the Mexican food section of many supermarkets
Ravioli with Roasted Red Pepper Sauce, adapted from The Pioneer Woman

The ever popular food blog, "The Pioneer Woman Cooks" inspired me to make this very quick dinner
- 3 whole Red Bell Peppers
- 2 Tablespoons Pine Nuts (optional)
- 2 Tablespoons Olive Oil
- 1 whole small shallot (or 1/2 whole Onion, Finely Diced)
- 2 cloves Garlic, Minced
- 1/4 cup parmesan cheese, grated
- 1/2 cups Heavy Cream
- 1/2 cup chicken stock (or vegetable stock)
- Flat Leaf Parsley, Finely Minced
- Fresh Parmesan, Shaved Or Grated
- 1/2 pounds (to 1 Pound) Pasta: Orecchiette, Penne, Fusilli, Etc. or
- 1 package Ravioli, with your favorite filling
Skillet Lasagna

This recipe is adapted from America's Test Kitchen
- For the Italian seasoning:
- 1 (28-ounce) can diced tomatoes
- Water
- 1 tablespoon olive oil
- 1 medium onion, minced
- Table salt
- 3 medium cloves garlic, minced or pressed through a garlic press (about 1 tablespoon)
- 1/8 teaspoon red pepper flakes (I increased it to 1/2 teaspoon)
- 1 pound unseasoned meatloaf mix (combination of ground beef and pork)*
- I used 3 Italian sausages, and 1/2 pound ground beef
- 10 curly-edged lasagna noodles, broken into 2-inch lengths (uncooked)
- 1 (8-ounce) can tomato sauce
- 1 Tablespoon Italian seasoning (my addition)
- 1/2 cup grated Parmesan cheese plus 2 additional tablespoons
- 2 cups of grated cheese (I used a 4-cheese blend of Parmesan, Asiago, Fontina and Provolone) or you can use Mozarella
- Ground black pepper
- 1 cup ricotta cheese
- 3 tablespoons chopped fresh basil
- Equal parts (I use 1 Tbsp of each)
- dried thyme
- dried basil
- dried rosemary
- dried oregano
- dried marjoram
- garlic powder* (optional)
- red pepper flakes* (optional)
- I prefer to add only fresh garlic, when I am seasoning. I also prefer to add my own red pepper flakes so that I can control how much heat I want in a dish.
- Directions
- Mix all the dried herbs and spices together.
- Store in an air-tight container.
- Keeps for 6 months.
- Shake the bottle before using, to evenly distribute the flavors.
Asian Style Slaw

This recipe is slightly adapted from Cook's Country Magazine, August 2007
- SLAW:
- 1 (16-ounce) bag coleslaw mix (I used just plain sliced cabbage)
- 1 red bell pepper, seeded and sliced thin (I used orange)
- 1 cucumber, peeled, seeded, and sliced thin (I didn't use, and didn't miss)
- 4 scallions, sliced thin
- 1/2 cup fresh cilantro leaves, chopped
- 1/2 cup fresh mint, chopped (I omitted this, as my husband doesn't like mint)
- 1/2 cup roasted peanuts, chopped
- For the dressing:
- 5 tablespoons lime juice
- 2 1/2 tablespoons fish sauce (I reduced this by half)
- 3 tablespoons sugar
- 3 tablespoons rice vinegar
- 1 tablespoon grated fresh ginger
- 1/4 teaspoon cayenne pepper (I omitted this)
- 4 teaspoons toasted sesame oil
- Salt
Green Goddess Salad Dressing

Combine well, chill, and serve with greens, fish or shellfish
- 1 cup mayonnaise
- 1 clove garlic, minced
- 3 anchovy fillets, minced, or 1 tablespoon anchovy paste
- 1/4 cup finely chopped chives or green onions
- 1/4 cup minced parsley
- 1 tablespoon lemon juice
- 1 tablespoon tarragon vinegar
- 1/2 cup sour cream
- Salt and freshly ground black pepper
Pavlova Recipe

- Meringue Cake:
- 4 large egg whites
- 1 cup superfine or castor sugar
- 1 teaspoon white vinegar
- 1/2 tablespoon cornstarch (corn flour)
- Topping:
- 1 cup (heavy whipping cream
- 1 1/2 tablespoons granulated white sugar
- 1/2 teaspoon pure vanilla extract
- Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple, or other fruit of your choice
Reduced-Fat Mashed Potatoes (Cook's Country)

- 1 cup unsweetened apple pure juice (not concentrate)

- 1 cup red wine vinegar
