Old-Fashioned Pecan Pie

This pecan pie recipe differs from normal pie recipes - the filling set perfectly and was absolutely delicious
- PATEE BRISEE (ALL-BUTTER) PIE CRUST:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup (2-sticks) unsalted butter, chilled and cut into small pieces
- 1/4 to 1/2 cup ice water
- PIE FILLING:
- 1 cup maple syrup
- 1 cup light brown sugar, packed
- 1/2 cup heavy cream
- 1 tablespoon molasses
- 4 tablespoons unsalted butter, cut into 1/2-inch pieces
- 1/2 teaspoon salt
- 6 large egg yolks, lightly beaten
- 1 1/2 cups toasted and chopped pecans
- 1 (9-inch) unbaked pie shell (see note), chilled in pie plate for 30 minutes
- NOTE: Regular or mild molasses tastes best in this pie.
Golden Cream of Mushroom Soup with Crispy Shallots

Golden Sherry is what gives this soup a grown-up taste
- 6 to 8 ounces crimini mushrooms, sliced
- 3 small shallots, sliced thin
- 1 teaspoon thyme, dried or fresh
- 1 clove garlic, minced
- 1 tablespoon tomato paste
- 4 cups chicken stock, or vegetable or mushroom stock
- Kosher salt, to taste
- Pepper, to taste
- 2 tablespoons flour
- 1/4 to 1/2 cup heavy cream or half-and-half
- 2 to 3 tablespoons Golden Sherry (optional, but makes this taste fantastic) or dry white wine
- Creme fraîche for garnish

Simple, Perfect Chili

I've been making chili con carne for years, and my own recipe is really good
- 2 pounds ground beef
- 2 cloves garlic, chopped
- One 8-ounce can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup masa harina*
- One 15-ounce can kidney beans, drained and rinsed
- One 15-ounce can pinto beans, drained and rinsed
- Shredded Cheddar, for serving
- Chopped onions, for serving
- Tortilla chips, for serving
- Lime wedges, for serving

- Crushed apricots (about 8)

- 1 teaspoon baking soda
- 2 1/2 cups unbleached flour
- 1 teaspoon cream of tartar
- GLAZE:
- 2 1/4 cups (9-ounces) confectioners' sugar, sifted
- 2 tablespoons (1 1/- ounces) light corn syrup
- 1 1/2 to 2 tablespoons plus 1 teaspoon milk (3/4 to 1 1/8-ounces)
