- 3 tablespoons Grand Marnier*, optional (You could also choose bourbon or Amaretto, if desired)
- CARAMEL SAUCE:
- 1 cup white sugar
- 1/2 cup water OR
- 1/4 cup water and
- 3 Tablespoons water (or Grand marnier or bourbon)
- GARNISH:
- 6 ripe figs, cut in half
- Fine sugar or

Baked Lemon Pasta

- 1/2 stick (4 tablespoons) butter

- 2 cups (16-ounces) Guinness stout
- 1/2 cup light brown sugar, packed
- 1 1/2 tablespoons coriander seeds, crushed

- 1 cup amber beer

- 1/2 tsp allspice
- 1/8 tsp nutmeg

- CAKE:
- 2 cups Guinness Stout
- 4 sticks unsalted butter
- 1 1/2 cups Dutch process unsweetened cocoa powder
- 4 cups flour
- 4 cups sugar
- 1 tablespoon baking soda
- 1 1/2 teaspoons salt
- 4 large eggs
- 1 1/3 cups sour cream
- ITALIAN MERINGUE:
- 2/3 cup egg whites (about 4)
- Pinch Salt
- 1/4 teaspoon cream of tartar
- 1 1/3 cups sugar
- 1/4 cup plus 3 tablespoon water
- CHOCOLATE GANACHE:
- 1 heavy whipping cream
- 1 1/2 cups dark chocolate (not to exceed 72% cocoa)
Ramos Gin Fizz - A Grown Up Milkshake

If you've never had a Ramos Fizz, then you really must try one
- 2 oz. quality gin
- 1 oz. triple sec (or Cointreau)
- 4 oz. Sweet & Sour Mix*
- 1 egg white (I buy liquid eqg whites, which work just fine)**
- 4 oz. Half & Half Cream
- 1/2 tsp (a "dash" really) orange flower water
- 1 Tbs. confectioners or finely granulated sugar
- ice (I use about 4 ice cubes)
- Grated Nutmeg, for garnish
- Optional: 1 oz. fresh orange juice (not from concentrate)
- Some people choose to squeeze fresh lemon & lime juice and add simple syrup.
- powdered egg whites can be used, if you are afraid of raw eggs. I've never had a problem!
- Orange Flower Water is not that difficult to find. If found mine at Trader Joe's or most liquor stores should carry it.
