Fast and Easy Puff Pastry Dough

This recipe comes from King Arthur Flour, and it's one of the easiest and most successful pastries I've ever made
- Dough:
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup cold butter
- 1/2 cup sour cream
Beef Burgundy (Boeuf Bourguignon)

It's been years since I've had Beef Burgundy (otherwise known as Boeuf Bourguignon--a Julia Child specialty)
- 2 pounds chuck eye roast, cut into 2-inch pieces (ask your butcher about it, it's much more tender than stew cut meat)
- 1 bag pearl onions, frozen (you can go with fresh, but it's a hassle to peel those babies!)
- 2 medium carrots, washed and finely chopped
- 2 cloves garlic, minced
- 4 strips quality bacon (it's easier to cut while frozen)
- 1 1/2 cups Burgundy wine (or any red wine)
- 1 cup beef broth (I don't recommend bouillon cubes, as they can be salty)
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon (heaping) tomato paste
- 1 pound fresh white mushrooms, quartered
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 to 4 sprigs fresh thyme (or 2 to 3 teaspoons dried thyme, fresh is best)
- 2 sprigs fresh marjoram
- 1 Bay leaf
- Flour, salt & pepper (for seasoning the meat)
- Olive oil
- 1/2 cup fresh parsley, chopped for garnish
Cranberry-Almond Biscotti

My Italian friend shared her family recipe for this delicious biscotti
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 cup sugar
- 1/2 cup (1-stick) unsalted butter, room temperature
- 1 teaspoon grated lemon zest
- 1 teaspoon grated orange zest
- 1/4 teaspoons salt
- 2 large eggs
- 3/4 cup sliced almonds or pistachios
- 1/2 cup dried cranberries
- 12 ounces dark chocolate (for dipping)
Pomegranate Syrup

Combine ingredients in a heavy-bottomed sauce pan and bring to a gentle boil; reduce by half
- 1 cup Pomegranate Juice
- ½ cups Honey
- 2 teaspoons Pure Vanilla Extract
- 1 Tablespoon Butter
Strawberry Vanilla Jam - Reduced Sugar

This recipe comes from the recipe booklet for the Ball Jam & Jelly Maker Machine
- 3 1/4 cups (about four pints) fresh strawberries, crushed (for traditional recipe, using more sugar, reduce fruit to 2 2/3 cups)
- 3 tablespoons Ball RealFruit Classic Pectin
- 1/2 teaspoon butter
- 2 cups granulated sugar (for the traditional recipes, increase sugar to 3 1/3 cups
- 1 tablespoon Vanilla Bean Paste (or 1/4 vanilla bean, split in half lengthwise)
Spanish Tortilla Recipe

Waxy potatoes such as Yukon Golds or red-skinned new potatoes work well in this dish
- 6 eggs, beaten
- 2 Yukon Gold potatoes
- 2-3 green onions (or 1/4 cup chopped yellow onion), chopped up to the light green parts
- 1/4 cup olive oil
- Salt
Brown Butter Cranberry Shortbread (adapted from Fine Cooking)

Line a 9x13-inch pan with foil, leaving a slight overhang along the edges
- crust and topping ingredients
- 1 cup + 5 Tablespoons (10 1/2 oz.) unsalted butter, cut into chunks [Note: 1 cup of butter= 2 sticks]
- 1 cup granulated sugar [divided into 3/4 cup and 1/4 cup]
- 3/4 teaspoon salt
- 2 egg yolks, slightly beaten
- 1/4 teaspoon almond extract
- 3 cups + 3 Tablespoons (14 1/4 oz.) all-purpose flour

- 2 sticks unsalted butter, softened
- 3/4 cup golden brown sugar
- 3/4 cup granulated sugar
- 2 whole eggs
- 2 teaspoons vanilla extract
- 1/2 cup (rounded) malted milk powder
- 2 cups all-purpose flour
- 1 1/4 teaspoon baking soda
- 1 1/4 teaspoon salt
- One 12-ounce bag milk chocolate chips
Homemade Cream of Celery Soup

- 1 small yellow onion, finely chopped
- 5 celery stalks, finely chopped (about 2 cups)
- 1 large garlic clove, minced
- 1/3 cup chicken or vegetable stock
- 2/3 cup whole milk
- 1/3 cup all-purpose flour
- 1/2 teaspoon celery salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon dried thyme
Tomato & Basil Pesto Soup, Made Easy

I've made this soup numerous times, and have taken the time (and effort) of using my own homegrown tomatoes
- 1 large can plum tomatoes
- 1 quart low-sodium quality chicken stock (organic, if possible)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 tsp. red pepper flakes
- 1 tsp dried thyme (or fresh)
- 1 Tbsp. sugar
- 1 Tbsp. pesto (I make my own, and freeze it in an ice cube tray, but you can used bottled)
- coarse salt & fresh cracked pepper, to taste
