Shrimp Stew with Coconut Milk, Tomatoes & Cilantro

- 3 lb. jumbo (21 to 25 per lb.) shrimp, peeled and deveined
- Kosher salt
- 2 Tbs. extra-virgin olive oil
- 1 large red bell pepper, sliced into very thin 1-1/2-inch-long strips
- 4 scallions, thinly sliced (white and green parts kept separate)
- 1/2 cup chopped fresh cilantro
- 4 large cloves garlic, finely chopped
- 1/2 to 1 tsp. crushed red pepper flakes
- 14.5-oz. can petite-diced tomatoes, drained
- 13.5 - or 14-oz. can coconut milk
- 2 Tbs. fresh lime juice
Kansas City Style Barbecued Ribs

Spread the light brown sugar on a baking sheet and let it dry out for an hour or two to keep it from clumping
- For the rub:
- 1/4 cup packed light brown sugar
- 1/4 cup sugar
- 1/4 cup seasoned salt
- 2 Tbs. garlic salt
- 1 Tbs. onion salt
- 1-1/2 tsp. celery salt
- 1/4 cup sweet Hungarian paprika
- 1 Tbs. chili powder or seasoning
- 1 Tbs. freshly ground black pepper
- 1-1/2 tsp. rubbed dried sage
- 1/2 tsp. ground allspice
- 1/4 tsp. cayenne
- Pinch ground cloves
- For the sauce:
- 1/3 cup packed dark brown sugar
- 1/4 cup white vinegar; more to taste
- 2 Tbs. Worcestershire sauce
- 1 Tbs. prepared yellow mustard
- 1 Tbs. chili powder or seasoning
- 1-1/2 tsp. freshly ground black pepper
- 1/2 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1/4 tsp. cayenne
- 1/8 tsp. ground mace
- 2 Tbs. honey
- 2 cups tomato ketchup
- For the ribs:
- 2 to 4 slabs of spareribs, preferably with tips attached
