Chocolate Mint Chip Cookies

Preheat oven to 325 degrees F and line baking sheets with silicone baking mat or parchment paper
- 1-1/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup dutch-process cocoa-make sure to use dutch process for a rich/dark flavor
- 1/2 cup (1 stick) unsalted butter, cubed and room temp
- 1/2 cup white sugar
- 1/2 cup dark brown sugar
- 1-1/2 teaspoons vanilla
- 1/3 cup milk
- 1 bag of mint chips-I used Guittard
Sun Dried Tomato Pesto

- 1/2 cup sun dried tomatoes (minus the oil they were packed in)
- 2 tablespoons fresh basil leaves
- 1 clove garlic
- 2 tablespoons pine nuts (toasted)
- 2 tablespoons parmigiano reggiano (grated)
- 3 tablespoons olive oil (or oil from sun dried tomatoes)
- salt and pepper to taste

- 1/2 head red cabbage, finely chopped
- 1/2 head green cabbage, finely chopped

- 2 large yellow onions, cut in half and sliced
- 2 garlic cloves, minced
- 1 pound medium round potatoes, unpeeled
- 3/4 pound zucchini
- 1 1/4 pounds medium tomatoes

- 1/2 teaspoon freshly ground black pepper

- 1 medium sweet onion, sliced thinly
- 8 ounces fresh green beans cut into 1-inch pieces
- 1 large red bell pepper, sliced into thin strips
- 3-4 cloves garlic minced
- 4-5 scallions, thinly sliced
- For sauce:
- 2 heaping tablespoons Thai red curry paste
- 1 1/2 cups coconut milk
- 1/2 cup low sodium chicken broth,
- 1/3 cup chunky peanut butter
- 2 tablespoons brown sugar
- 1 tablespoon fish sauce
- 2 tablespoons lime juice
- Lime wedges for garnishing
- Cilantro sprigs for garnishing
