This is a very quick dinner to make, that captures the flavor of Chinese Cashew Chicken

  • Ingredients:
  • 2 lbs boneless skinless chicken breasts (cut into 1” chunks)
  • 1 large green pepper (sliced)
  • 1 large onion (sliced)
  • 3 cloves garlic, minced
  • 3 cups snow peas (trimmed of string on the top edge)
  • 1 can sliced water chestnuts (optional)
  • vegetable oil
  • For the sauce:
  • 1 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon pepper
  • 3 tsp corn starch
  • For Garnish:
  • 2 cups cashews
  • 1/3 cup green onions (chopped)

  • 2/3 cup dry white wine (I used a dry Spanish Albarino)

  • 1 meyer lemon, thinly sliced and seeded
  • 1 1/2 lb salmon fillet, pin bones removed
  • 1/2 cup whipping cream

  • 2 cups chicken broth (you can also use 2 tsp better than bouillon and 2 cups water)

I haven't made pancakes from a boxed mix in years, because scratch pancakes aren't all that difficult to make

  • RASPBERRY COMPOTE:
  • 1 pint fresh raspberries (frozen works too, no need to thaw)
  • 1/2 cup sugar
  • 1 tablespoon clearjel*
  • 1 tablespoon fresh lemon juice
  • PANCAKES:
  • 1 1/2 cups heaping cups yellow cornmeal
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 1/4 cups whole milk, plus more if needed for thinning
  • 1 tablespoon white vinegar
  • 1 tablespoon vanilla
  • 2 large eggs
  • 4 tablespoons salted butter, melted, plus additional melted butter for the skillet
  • Pats of butter, for serving
  • Maple syrup, for serving, optional
  • NOTE: You can easily cut the ingredients in half, if you are cooking for two (as we are) This yielded 9 pancakes, using a 1/4 cup measure per pancake.
