Chinese Fakeout: Cashew Chicken

This is a very quick dinner to make, that captures the flavor of Chinese Cashew Chicken
- Ingredients:
- 2 lbs boneless skinless chicken breasts (cut into 1” chunks)
- 1 large green pepper (sliced)
- 1 large onion (sliced)
- 3 cloves garlic, minced
- 3 cups snow peas (trimmed of string on the top edge)
- 1 can sliced water chestnuts (optional)
- vegetable oil
- For the sauce:
- 1 cup chicken broth
- 2 tablespoons oyster sauce
- 1 tablespoon sugar
- 2 tablespoons soy sauce
- 1 teaspoon pepper
- 3 tsp corn starch
- For Garnish:
- 2 cups cashews
- 1/3 cup green onions (chopped)
Salmon Burgers (Jaden Hair)

1. In a food processor, add the shallot and pulse until the shallot is finely chopped
- 1 large shallot, peeled and quartered
- 1 1/2 pounds salmon filet, skinned and cut into 2" chunks
- 1 teaspoon kosher/sea salt (1/2 teaspoon regular salt)
- zest of lemon
- 1/2 teaspoon lemon juice
- couple sprigs of fresh parsley
- 1 egg
- 1/2 cup panko bread crumbs (or regular bread crumbs
- 1 tablespoon cooking oil
- 6 hamburger buns
- lettuce, mustard, tomato and other burger accompaniments
Poached Salmon with Dijon Cream Sauce

This is such a simple way to poach salmon with white wine, shallots, thyme and fresh chives
- 2/3 cup dry white wine (I used a dry Spanish Albarino)
- 3 tablespoons chopped chives, divided
- 2 sprigs of thyme
- 1 shallot, thinly sliced
- 1 meyer lemon, thinly sliced and seeded
- 1 1/2 lb salmon fillet, pin bones removed
- 1/2 cup whipping cream
- 4 teaspoons Dijon mustard
Apple-Maple Glazed Chicken Breasts

- 1 1/2 cups apple cider plus an additional 2 tablespoons
- 1/3 cup light corn syrup
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard

- Table salt and ground black pepper
- 1/2 cup all-purpose flour
- 4 bone-in, skin-on chicken breast halves (about 12 ounces each), ribs removed, trimmed of excess fat and skin (see note above)

- 1 tsp olive oil
- 1 medium yellow or white onion, diced
- 2 garlic cloves, minced
- 1 lb Russet potatoes, peeled and cut into bite-size cubes
- 1 1/2 lbs boneless skinless chicken breasts (uncooked), cut into bite-size cubes
- 1 (15 oz) can chickpeas, rinsed and drained (OPTIONAL)
- 2 Tbsp brown sugar
- 1 Tbsp minced fresh ginger
- 1 tsp ground turmeric
- 1 tsp curry powder
- 1/2 tsp ground corinader seed
- 1 tsp kosher salt
- 1/2 tsp crushed red pepper
- 2 cups chicken broth (you can also use 2 tsp better than bouillon and 2 cups water)
- 1 1/2 cups water
- 1 1/2 cups jasmine rice, rinsed
- 1 (13.5 oz) can coconut milk
- 3 Tbsp cornstarch
- 3 Tbsp water
- 1 lime, juiced
- Salt and pepper

- 1 1 1 cup butter, room temperature
- 1 1/2 1 1/2 1/2 cups white sugar
- 4 4 4 eggs
- 1 1 1 cup milk
- 1 1 1 teaspoon almond extract OR
- 1 1 1 tsp Lemon Baking Emulsion AND
- 1 1 1 tsp Pure Vanilla
- 3 1/4 3 1/4 1/4 cups all-purpose flour
- 1 1 1 tablespoon baking powder
- 1/8 1/8 1/8 teaspoon salt
- 1/4 1/4 1/4 cup unsweetened cocoa powder
- 1/2 1/2 3 tsp imitation rum flavor (or 3 tablespoons dark rum*)

1) Preheat the oven to 375°F
- 3/4 cup vegetable shortening*
- 1 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 large egg
- 1/3 cup molasses
- 2 1/3 cups King Arthur Unbleached All-Purpose Flour
- 1 to 2 teaspoons ground ginger
- 1/2 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- Can you substitute butter for the vegetable shortening? Yes; but the cookies will be soft, not crisp.
- Coating
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
Cornmeal Pancakes with Rasperry Compote

I haven't made pancakes from a boxed mix in years, because scratch pancakes aren't all that difficult to make
- RASPBERRY COMPOTE:
- 1 pint fresh raspberries (frozen works too, no need to thaw)
- 1/2 cup sugar
- 1 tablespoon clearjel*
- 1 tablespoon fresh lemon juice
- PANCAKES:
- 1 1/2 cups heaping cups yellow cornmeal
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 2 tablespoons baking powder
- 1/2 teaspoon kosher salt
- 2 1/4 cups whole milk, plus more if needed for thinning
- 1 tablespoon white vinegar
- 1 tablespoon vanilla
- 2 large eggs
- 4 tablespoons salted butter, melted, plus additional melted butter for the skillet
- Pats of butter, for serving
- Maple syrup, for serving, optional
- NOTE: You can easily cut the ingredients in half, if you are cooking for two (as we are) This yielded 9 pancakes, using a 1/4 cup measure per pancake.

- 1 1/2 teaspoons soy sauce

- 1/2 teaspoon sesame oil
