- BREAD CRUMB TOPPING:
- 2 large (16 to 18-ounce) bone-in rib-eye steaks
- 1 sprig fresh rosemary
- 4 sprigs fresh thyme
- Extra-virgin olive oil
- Kosher salt and freshly cracked black pepper
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 2 to 3 garlic cloves, thinly sliced
- 2 sprigs fresh thyme, leaves removed
- 2 sprig fresh rosemary, leaves removed
- 1 About 1 cup panko bread crumbs
- Salt and freshly cracked black pepper
- CREAMED RAINBOW CHARD:
- 1 large bunch Swiss chard, leafs removed from the stem and leaves chopped (or fresh spinach)
- 2 cups heavy cream
- 2 fresh bay leaves
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 to 3 cloves garlic, peeled
- Freshly grated Parmesan, to taste
- Salt and freshly cracked black pepper
- 1 lemon, juiced
Raspberry Coulis Sauce with a Chambord Kick

Coulis sauce is simply a puree of fruit (or vegetable)
- 2 (8-ounce) containers fresh or frozen raspberries
- 1 teaspoon lemon rind
- 1 tablespoon fresh lemon juice
- 1/2 cup sugar
- 1/2 cup water
- OPTIONAL: 1 Tablespoon Chambord (Raspberry Liquor)
Quick Chicken Fricassee

1. Pat chicken dry with paper towels and season with 1 teaspoon salt and ½ teaspoon pepper
- 2 pounds boneless, skinless chicken breasts , thighs, or a combination
- Table salt and ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 pound cremini mushrooms , stems trimmed, caps wiped clean and cut into 1/4-inch slices
- 1 medium onion , chopped fine (about 1 cup)
- 1/4 cup dry white wine
- 1 tablespoon unbleached all-purpose flour
- 1 medium garlic clove , minced or pressed through garlic press (about 1 teaspoon)
- 1 1/2 cups low-sodium chicken broth
- 1/3 cup sour cream
- 1 egg yolk
- 1/2 teaspoon freshly grated nutmeg
- 2 teaspoons juice from 1 lemon
- 2 teaspoons minced fresh tarragon (see note)
- Two tablespoons of chopped fresh parsley leaves may be substituted for the tarragon in this recipe.

For the crust: Combine the flour, sugar, cinnamon and salt in the bowl of a food processor, pulsing to combine
- For the crust:
- 1 1/2 cups plus 1 tsp all purpose flour
- 2 1/2 tbsp sugar
- 1/2 heaping tsp cinnamon
- pinch of salt
- 11 tbsp chilled unsalted butter, cut into 1/2-inch pieces
- 3/4 tsp vanilla extract
- 2 tbsp ice cold water
- 1 egg, beaten to blend
- For the crumb topping:
- 2/3 cup rolled oats
- 1/2 cup all purpose flour
- 1/2 cup firmly packed light brown sugar
- 1/4 tsp cinnamon
- 6 tbsp chilled unsalted butter, cut into 1/2-inch pieces
- For the filling:
- 3/4 lb rhubarb, sliced 1/2-inch thick on sharp diagonal
- 1 quart strawberries, hulled and halved
- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
Meyer Lemon Yogurt Bundt Cake

- GLAZE:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon Kosher salt
- 1 cup plain whole-milk yogurt*
- 1 1/3 cups sugar, divided
- 3 extra-large eggs
- 2 teaspoons lemon zest, grated (2 lemons)
- 1/2 teaspoon pure vanilla extract
- 1/2 cup vegetable oil
- 1/3 cup freshly squeezed lemon juice
- 1 cup confectioners' sugar
- 2 tablespoons freshly squeezed lemon juice
- I use non-fat Greek yogurt or low-fat yogurt with great results.

- SPECIAL EQUIPMENT:
- 1 large onion, sliced
- Extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 large Russet potatoes, washed
- 2 to 3 tablespoons butter, broken into small pieces
- 1 garlic clove, minced, optional
- Parchment paper cut into large circle to fit saute pan

- Pastry Crust:
- 1 1/2 sticks cold unsalted butter, cut into pea-size pieces
- 1 cup flour

- 1 1/2 sticks unsalted butter
- 1 cup sugar
- 3/4 cup flour
- 3 eggs
- 1 vanilla bean*, split and insides scraped
- Apples:
- 2 tablespoons butter
- 6 Golden Delicious apples, peeled, cored and cut into 1/8ths
- 2 tablespoons sugar
- 1/4 cup brandy
- 1/2 cup golden raisins
- OPTIONAL: 1 Tbsp. Boiled Cider (purchased from King Arthur Flour)
- Flour, for dusting
- 1 egg, beaten with 1 tablespoon water
- Special Equipment: 9-inch tart pan
