An easy lasagna-esque pie with a quick, homemade tomato sauce that you can customize with any spices you like
- CRUST:
- 6 ounces spaghetti or angel hair pasta
- 2 tablespoons butter, melted
- 1 egg
- 1/3 cup grated parmesan cheese
- 1 cup cottage or ricotta cheese
- MEAT FILLING:
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 large clove garlic, finely minced
- 1/4 cup green peppers, chopped (optional)
- 1/8 teaspoon red pepper flakes
- 6 ounces tomato paste
- 1 (8-ounce) can diced tomatoes
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1/2 cup mozzarella cheese, grated

- 4 large slices white sandwich bread , torn into 1-inch pieces
- 2 tablespoons unsalted butter , melted

- 1 small shallot , minced (about 2 tablespoons)
- 1/4 cup plus 5 tablespoons unbleached all-purpose flour
- 2 large eggs
- 2 teaspoons prepared horseradish (optional)
- 3 tablespoons mayonnaise
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 1/4 pounds skinless cod fillet , or haddock fillet, or other thick white fish fillet (1 to 1 1/2 inches thick), cut into 4 pieces (see note)

- 1 slice high-quality white sandwich bread, torn into quarters
- 2 tablespoons whole milk
- 1 pound ground turkey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons vegetable oil
- 2 onions, minced
- 2 tablespoons chili powder
- 2 tablespoons tomato paste
- 3 garlic cloves, minced
- 2 teaspoons ground cumin
- 2 teaspoons fresh oregano, minced or 1/2 teaspoon dried
- 1/4 teaspoon red pepper flakes
- 1 (15-ounce) can tomato sauce
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (15-ounce) can pinto beans, drained and rinsed

Mocha Coconut Frappuccino Cupcakes

Cupcakes: In a bowl, whisk egg and sugar until smooth and no lumps remain
- Cupcakes:
- 1 1/8 cups all purpose flour
- 1/4 cup dark cocoa powder
- 3 tablespoons instant coffee powder
- 1 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white sugar
- 1 egg
- 2 teaspoons vanilla extract
- 3/4 cup coconut milk
- Coconut Frosting
- 2 sticks of butter, softened (1 cup)
- 3 2/3 cups powdered sugar + more if needed
- 1 tablespoon vanilla extract
- 1 teaspoon of coconut extract (if you don’t have this, no big deal)
- 1-2 tablespoons of lite coconut milk
- 1/2 cup shredded, sweetened coconut
- 1/2 cup shredded coconut, toasted
- 1/2 cup butter, melted
- 2 tablespoons sour cream
- 1/2 cup chocolate or cappuccino chips
- Mocha Coconut Drizzle:
- 2/3 cup powdered sugar
- 1 teaspoon instant coffee powder

- 1 tablespoon Italian seasoning
- 1/4 teaspoon onion powder

- 16 ounces baby potatoes, halved

- 2 skinless, boneless chicken breast, diced into bite sized chunks
- 1 tbsp cornstarch
- 2 tsp sesame oil

- 2 large garlic cloves, minced
- 1-2 tsp fresh ginger, grated
- 1 tsp crushed red pepper flakes (less if you don't want it really spicy)
- 3 tbsp seasoned rice vinegar
