Clam Chowder for Two from Mary at One Perfect Bite

Drain clams, reserving juices
- 2 (6.5 ounce) cans minced clams ( For an added bonus, we added quite a few fresh shrimp)
- 1 (8 ounce) bottle clam juice
- Water, if necessary
- 2 slices thick cut bacon cut into 1/4 inch pieces
- 1/2 onion, chopped fine
- 1 clove minced garlic (perhaps a bit more)
- 1 tablespoon unbleached flour
- 2 large red potatoes, scrubbed and cut into 1/2 inch pieces
- 1 large bay leaf
- 1/2 teaspoon fresh thyme, or perhaps more
- 1/2-3/4 cup heavy cream
- 1 tablespoon minced fresh parsley
Golden Pull-Apart Butter Buns

These rolls are amazing! They are very tender, and pretty easy to make
- BUNS:
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour
- 2 teaspoons instant yeast
- 2 tablespoons potato flour or 1/4 cup instant potato flakes
- 3 tablespoons Baker's Special Dry Milk or nonfat dry milk
- 2 tablespoons sugar
- 1 1/2 teaspoons salt
- 4 tablespoons soft butter
- 2/3 cup lukewarm water
- 1/2 cup lukewarm milk
- TOPPING:
- 2 tablespoons melted butter
Congo Bars, Cook's Illustrated

Despite their name, Congo bars have nothing at all to do with Africa
- 1 cup pecans (or walnuts), toasted and chopped coarse
- 1 1/2 cups unsweetened shredded coconut
- 1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
- 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), melted and cooled
- 1 1/2 cups packed light brown sugar (10 1/2 ounces)
- 2 large eggs , lightly beaten
- 4 teaspoons vanilla extract
- 6 ounces white chocolate chips (1 cup) or chopped bar, or 3 ounces each white chocolate and semisweet chocolate chips

Shrimp and Coconut Milk Soup with Ginger & Lemongrass

To prepare the broth, crush the lemongrass with the back of a knife or a cleaver, or use a mallet
- Coconut Broth:
- 4 stalks lemongrass
- 5 cups canned unsweetened coconut milk
- 1 stalk celery, diced
- 1/4 cup ginger, minced
- 6 tablespoons freshly squeezed lemon juice
- 1 tablespoon garlic, minced
- 1/4 cup fresh cilantro, minced
- 1 cup dry white wine
- Salt & pepper, to taste
- 12 each Jumbo prawns U-12 or U-15
- 1 tablespoon virgin olive oil
- 1 whole onion, thinly sliced
- 1 whole carrot, thinly sliced
- 1 small leek, julienned
- Salt & pepper, to taste
- 16 fresh basil Leaves, coarsely chopped
- 2 tablespoons fresh chives, finely sliced
- 3 oz haricots vert, blanched and sliced into 1-inch lengths
- 1 large tomato, blanched, peeled, seeded, diced

Combine cream cheese and powdered sugar in a large mixing bowl
- 2 (8 oz.) pkgs. cream cheese, softened
- 2 c. powdered sugar, sifted
- 1 (8 oz.) carton sour cream
- 2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1 c. whipping cream
- 1 tsp. vanilla extract
- 1 tbsp. sugar
- 1 Angel Food cake, cut into 1-inch cubes
- 2 qts. fresh strawberries, hulled & sliced
- 3 tbsp. sugar
- 3 tbsp. amaretto
- Fresh whole strawberries
- Fresh mint leaves

- 3 tablespoons unsalted butter
- 2 onions, chopped fine
- 1/4 cup all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1 cup half-and-half
- 1 3/4 teaspoons salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 2 cups shredded sharp cheddar cheese
- 8 cups frozen shredded hash brown potatoes
- 1/2 cup sour cream

- Dressing:
- 2 cups mayonnaise
- 1 cup milk
- 1 cup sour cream
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- A few dashes hot sauce, or to taste
- 1 clove garlic, grated
- Salt and freshly ground black pepper
- Salad:
- 3 ears corn, shucked
- 3 heads green leaf lettuce, torn into chunks
- 2 cups halved red grape tomatoes
- 1/2 red onion, diced
- 1 cup grated Monterey Jack cheese
- 2 cups crushed-up tortilla chips
- 1 avocado, diced (optional)
Strawberry Cream Pie

Cover bottom of cooled pastry shell with nuts
- 1 9-inch baked pastry shell
- 1/2 cup slivered blanched almonds, toasted (Jesse doesn’t like nuts so I left them out, but I bet they’d be great in here.)
- 1 recipe cream filling (below, make first)
- 2 1/2 cups fresh strawberries
- 1/2 cup water
- 1/4 cup sugar
- 2 teaspoons cornstarch
- Few drops red food coloring (This is not needed, tastes bad, and I never use it.)

Magic Cookie Bars (Hello Dollies)

Magic Cookie Bars are a classic bar cookie recipe that is very easy to make
- 1/2 cup butter, melted, 1 stick
- 1 1/2 cups graham cracker crumbs
- 1 (14-ounce) can Sweetened Condensed Milk
- 2 cups semisweet chocolate morsels
- 1 1/3 cups flaked coconut
- 1 cup chopped nuts (I used walnuts)
