STUFFED BELL PEPPERS

*****Note – make sure you cook your turkey ahead of time that way you do not have to worry about it later
- Toppings:
- Olive Oil
- 1/2 lb lean ground turkey breast
- 1 cup chopped onions
- 1 heaping tbsp of homemade taco seasoning (or you can use the packaged type if you like)
- 2 cups of cooked rice (any type you like – I like brown)
- 3-4 organic bell peppers, halved and seeds removed
- 1 can of black beans, drained & rinsed
- 1/2 cup of organic frozen corn
- 1 (15 -16 ounce) jar of salsa
- Shredded Cheddar Cheese
- fresh cilantro
- sour cream
- sliced avocado
Summer Vegetable Pasta Salad

To cut preparation time, use 1/3 cup bottled vinaigrette salad dressing in place of shallot-mustard dressing
- 8 ounces dried campanelle, penne, or mostaccioli pasta (2-1/3 cups)
- 5 tablespoons extra-virgin olive oil
- 6 - 8 cloves garlic, thinly sliced
- 1 medium zucchini (8 oz.) trimmed and cut into matchstick-size strips (2 cups) 8 ounces
- sugar snap peas, strings removed
- 2 cups cherry or grape tomatoes, halved
- 1 shallot, finely chopped (3 Tbsp.)
- 1 tablespoon sherry vinegar or white wine vinegar
- 1 tablespoon Dijon-style mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 tablespoons chopped fresh parsley
- Finely shredded Asiago cheese (optional)
"Buffalo" Style - Stuffed Eggs

Hard cook eggs. Cool, shell, then cut in half to make 24 shells
- 12 Eggs
- 1/2 cup blue cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon parsley, minced
- 1/2 teaspoon Tabasco sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon celery salt
- 2 ribs celery, finely diced
Rocket Fuel (Homemade Hot Sauce)

Place all ingredients into a medium sauce pan and bring to a boil
- 1 cup drained jalapeno slices (from a jar)
- 4 tablespoons jalapeno liquid (from the same jar of peppers)
- 1/4 teaspoon cayenne powder
- 1/4 teaspoon cumin
- 1 tablespoon cilantro
- 1 teaspoon agave nectar
- 1/8 teaspoon Tabasco
- 1/4 teaspoon oregano
- 1 teaspoon fish sauce (optional)
- 1 teaspoon chili paste
- 2 garlic cloves
- 2 teaspoon sugar
- 1/4 teaspoon powdered ginger
- 1 tablespoon lime juice
- 1 ripe pear, skinned and seeded
- 1/4 cup water
Wendi's Mac and Cheese

boil all the mac, put half of it in a 9x13, put a layer of sliced xtra sharp, dot it with cut up butter, sprinkle 1...
- 1 lb EXTRA sharp cheddar, 1/2 pound Medium sharp cheddar
- and a pound of elbow mac
- thin slice the extra sharp
- grate the medium sharp
NUTTER BUTTER MILK SHAKE

- 1 pint vanilla ice cream
- 1 cup milk
- 1/4 cup chocolate-flavored syrup

- 1/4 cup margarine
- 4 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon sugar
- 7 cups Rice Chex (or combination ) or 7 cups Corn Chex (or combination )
- 1 1/2 cups salted peanuts
- 1 cup pretzel
- 1 cup gold fish cracker
