Meatball Soup

I love to make soups, but this is my husband's favorite
- 1 pound lean ground turkey
- 2 1/2 teaspoons Italian seasoning, divided
- 1/4 teaspoon paprika
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 2 teaspoons olive oil
- 2 celery ribs, chopped
- 15 baby carrots, chopped
- 1 med. onion, chopped
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 can (14 1/2 oz) Italian diced tomatoes, undrained
- 1 can (14 1/2 oz) chicken broth
- 3/4 cup chopped cabbage
- 3/4 cup fresh or frozen green beans
- Shredded mozzarella or parmesan cheese for garnish
Slow Cooked Taco Soup

I watched Paula Deen make this flavorful soup on television, and just had to try it
- 2 pounds ground beef
- 2 cups diced onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 (15 1/2 oz.) cans pinto beans
- 1 (15 1/2 oz.) can pink kidney beans
- 1 (15 1/4 oz.) can whole kernel corn
- 1 (14 1/2 oz.) can Mexican-style stewed tomatoes
- 1 (14 1/2 oz.) can diced tomatoes
- 1 (14 1/2 oz.) can tomatoes with chiles
- 2 (4 1/2 oz.) can diced green chiles
- 1 (1 1/4 oz.) package taco seasoning mix
- 1 (1 oz.) package ranch salad dressing mix
- Corn chips, for serving
- Sour cream, for garnish
- Grated cheese, for garnish
- Chopped green onions, for garnish
- Pickled jalapenos, for garnish
Slow-Cooker Swiss Steak

This delicious swiss steak is wonderful served with mashed potatoes and the vegetable of your choice! It turns out
- 2 pounds round steak (1/2 inch thick)
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10-ounce) package frozen diced onion, red and green bell pepper, and celery, thawed (1/2 cup each of fresh may be substituted)
- 1 (14.5-ounce) can diced tomatoes
- 1 (24 -ounce) container of home-style mashed potatoes
- Fresh green beans, or other favorite veggie
Arroz Con Pollo

This is the best arroz con pollo recipe I have found!
- 1 broiler /fryer chicken, about 5 lbs., cut into eight pieces ( discard giblets and wings)
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all purpose flour
- 3 Tablespoons vegetable oil
- 1 small onion, diced
- 3 cloves garlic, sliced
- 1 cup white rice, uncooked
- 1 can 14.5 oz chicken broth
- 1 packet Goya Sazon con Azafrain
- 1 box 10 oz. frozen peas
Ham Hock and Lentil Soup

This soup is soooo wonderful! Tastes better than one of my favorite restaurant's version!
- 2 tablespoons olive oil
- 2 cups small diced onions
- 1 cup small diced celery
- 1 cup small diced carrots
- Salt
- Black pepper
- 2 tablespoons chopped garlic
- 2 bay leaves
- 6 sprigs of fresh thyme
- 2 quarts chicken stock
- 3 to 4 smoked ham hocks
- 1 pound orange lentils
- 2 tablespoons chopped parsley
Paula Deen's Traditional Southern Deviled Eggs

Papa helped me to make these for Thanksgiving this year
- 7 large eggs, hard boiled and peeled
- 1/4 cup mayonnaise
- 1 1/2 T. sweet pickle relish
- 1 t. prepared mustard
- Salt and pepper, for taste
- Paprika, for garnishing
- Sweet gherkin pickles sliced, for garnishing
- Pimentos, for garnishing
Overnight Peach French Toast

Just the name of this dish makes my mouth water! I like to serve it with some sausage or bacon, and a steaming cup
- 1 cup packed brown sugar
- 1/2 cup butter or margarine
- 2 tablespoons water
- 1 can (29 oz.) sliced peaches, drained
- 12 slices day-old French bread (3/4 inch thick)
- 5 eggs
- 1 1/2 cups milk
- 1 tablespoon vanilla extract
- Ground Cinnamon
Chicken and Chorizo Paella

- 1 1/4 lb. boneless, skinless chicken breasts, cut into 1 inch chunks
- salt
- 1/4 cup flour
- 2 T. vegetable oil
- 1 med. onion, finely chopped
- 2 cloves garlic, finely chopped
- 4 oz. cooked chorizo sausage, cut into 1/4 inch rounds
- 1 1/2 cups long-grain rice
- 3 1/2 cups chicken broth
- 1 15 oz. can diced tomatoes, drained
- 1 cup frozen peas
Chocolate-Chip-Cookie Icebox Cake

Directions To make the cookies: Preheat the oven to 350 degrees F
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/4 teaspoons salt
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 1/2 cups packed light brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 12 ounces semisweet chocolate chips or chunks (2 cups)
- 4 cups heavy cream, well chilled
- 8 ounces mascarpone cheese
- 2 tablespoons granulated sugar
- 1 tablespoon whiskey (optional)
- Chocolate curls, for garnish

- 1/2 cup dried navy beans
- 4 cups chicken broth
- 6 sprigs of fresh thyme
- 1 1/2 lbs chicken thighs
- 1/2 - 1 cup frozen peas, thawed
