Broccoli and Beef Pasta

This slow cooking recipe is delicious!
- 2 cups broccoli florets or 1 (10 oz) package frozen broccoli, thawed
- 1 onion, thinly sliced
- 1/2 teaspoon each dried basil, dried oregano and dried thyme
- 1 can (about 14 oz) Italian-style diced tomatoes, undrained
- 3/4 cup beef broth
- 1 pound ground beef
- 1 teaspoon salt
- 2 cloves garlic, minced
- 2 cups cooked rotini pasta
- 3/4 cup shredded cheddar cheese
- 2 tablespoons tomato paste
No-Knead Crusty Bread

This bread is so easy that I was very skeptical that it would work
- 3 cups all-purpose or bread flour, more for dusting
- 1/4 teaspoon instant yeast
- 1 1/4 teaspoons salt
- 1 5/8 cups water
- Cornmeal or wheat bran (optional)
Eric's Hamburger Pie

This tasty dish is one of my brother's favorites
- 1 pound ground beef or ground turkey
- 1 small onion, chopped
- 3/4 - 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 can condensed tomato soup
- 1 can cut green beans, drained or the equivalent of cooked fresh
- 4 servings mashed potatoes
Best-Ever Barbecued Ribs

These slow-cooker ribs couldn't be simpler
- 1 teaspoon each paprika, salt and dried thyme
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground red pepper (cayenne)
- 3 to 3 1/2 pounds well trimmed pork baby back ribs, cut into 4-rib pieces
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon each Worcestershire sauce and soy sauce
Microwave Cauliflower & Broccoli Au Gratin

This recipe is so delicious that it is hard to believe it all comes together in the microwave!
- 1 lb. cauliflower florets
- 1 lb. broccoli florets
- 1/2 cup water
- 4 oz. cream cheese, cubed
- 1/4 cup milk
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar or Velveeta cheese
- 10 Ritz Crackers, crushed
- 3 Tablespoons grated parmesan cheese
Chicken Salad Erinique

This is an adaptation of Ina Garten's Chicken Salad Veronique
- 4 chicken breast halves (bone-in, skin-on)
- olive oil
- kosher salt & freshly ground black pepper
- 1 ⁄3 cup good mayonnaise
- 1/3 cup sour cream
- 2 t. dijon
- 1 1⁄2 tablespoons chopped fresh tarragon leaves
- 1 cup small-diced celery (2 stalks)
- 1 cup green grape, cut in 1/2
- 1/4 cup chopped pecans
Scalloped Potatoes and Ham

Directions Preheat the oven to 375 degrees F
- 4 tablespoons (1/2 stick) butter, plus extra for greasing dish
- 1/2 yellow onion, diced
- 1/3 cup all-purpose flour
- 1 1/2 cups half-and-half
- 1 1/2 cups milk
- Freshly ground black pepper
- 2 pounds russet potatoes, washed thoroughly
- 3 cups diced cooked ham
- 2 cups grated Monterey Jack cheese
- Chopped fresh parsley, for sprinkling, optional

Never-Fail Yeast Rolls

- 1 package (1/4 oz.) active dry yeast
- 1 1/2 cups warm water 110-115 degrees
- 3 1/4 cups all-purpose flour
- 9 oz. yellow or white cake mix
- 1/2 t. salt

Spicy Nacho Bake

This layered Southwestern casserole is one of my favorites
- 1 pound ground beef or ground turkey
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (28 oz.) diced tomatoes, undrained
- 1 can (15 1/2 oz.) hot chili beans
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (11 oz.) whole kernel corn, drained
- 1 can (15 oz.) tomato sauce
- 1 envelope taco seasoning
- 1 bag (12-13 oz.) spicy nacho tortilla chips
- 2 cups shredded cheddar or Velveeta cheese
