- 1 lb. ground beef
- 1 cup water
- 1 t. salt
- 1/2 t. cumin
- 1/2 t. black pepper
- 1 t. garlic powder
- 1 1/2 t. glutamate (called Accent in the spice aisle)
- 1 small and finely diced potato
- 1/2 of a diced bell pepper
- 1/2 of a diced onion
- 1 small diced tomato
Lime Chicken Tacos

- 1 1/2 pound boneless skinless chicken breasts
- 3 tablespoons lime juice
- 1 tablespoon chili powder
- 1 teaspoon salt

- 3/4 pound ground chicken
- 1/2 pound chicken sausage, casings removed
- 2/3 cup fresh white bread crumbs
- 2 teaspoons minced garlic
- 3 tablespoons chopped fresh parsley leaves
- 1/4 cup grated Romano cheese
- 1/4 cup grated parmesan, plus more for serving
- 3 tablespoons milk
- 1 extra-large egg, lightly beaten

- 1 T. EVOO plus more for drizzling
- 1- 1 1/4 lbs. ground turkey
- 6 plum tomatoes
- 4 cloves garlic
- 1 fresh red chile pepper
- 1 red or yellow onion
- 2 T. finely chopped fresh thyme
- 3 T. butter
- 1/2 cup orzo
- 1 cup long grain white or brown rice
- 2 cups chicken stock
- 1 cup Parmigiano-Reggiano

These sandwiches take a little work, but taste amazing!
- 2 skinless, boneless chicken breasts (about 6 oz. each)
- salt and pepper
- 1 teaspoon paprika
- Peanut oil, for frying
- 1 large egg
- 1/2 cup nonfat milk
- 3/4 cup all-purpose flour
- 1/4 cup whole-wheat flour
- 1 tablespoon malted milk powder
- 1 tablespoon plus 1 teaspoon powdered sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon dry mustard
- 1 sour pickle, cut into 8 slices, plus 1 tablespoon pickle
- juice from the jar
- 2 teaspoons white vinegar
- 4 soft hamburger buns
- 1 tablespoon butter, softened
Favorite Alfredo Pizza

1. Heat oven to 450 degrees
- 1 prepared pizza crust, such as Boboli
- 8 oz. alfredo sauce (I like Buitoni or homemade)
- 1 tablespoon olive oil
- 1 cup cooked, cubed chicken
- 1/2 green bell pepper, chopped
- 1/2 red onion, chopped
- 1-2 ripe tomatoes, sliced
- 1/4 cup Parmesan cheese
- 1 cup Monterey Jack cheese
- 1/4 teaspoon red pepper flakes, optional
