Ensure Apple Pecan Muffins

These yummy muffins are made with a popular nutritional drink! Good and good for you!
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 2 cups bran cereal
- 1 1/2 cups Butter Pecan or Vanilla Ensure
- 1/3 cup firmly packed brown sugar
- 1 cup peeled and chopped apple
- 1/2 cup applesauce
- 1 egg, lightly beaten
- Chopped Pecans, to garnish tops
Chicken and Biscuits

Directions Cook the bacon in 2 teaspoons of the oil in a heavy pot or Dutch oven over medium heat until crisp
- 1 strip bacon, cut into small lardons
- 3 teaspoons vegetable oil
- 1 pound chicken legs
- 1 pound chicken thighs
- Kosher salt and freshly ground black pepper
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, diced
- 1 tablespoon all-purpose flour

Quickest Chicken Noodle Soup

Preparation 1. Bring water to a boil in a soup pot
- 8 cups water
- 2 tablespoons oil (I like to use sesame oil)
- 2 boneless, skinless chicken breast halves, cut into bite-size pieces
- 1 carrot, shredded
- 1 cup thinly slivered cabbage (like for coleslaw)
- 2 cloves garlic, minced or crushed
- 1 teaspoon peeled and grated fresh ginger (optional)
- 4 packages chicken- or oriental-flavor ramen noodles
- Soy sauce to taste
Garden Salsa

- 1 med. green pepper, chopped
- 2 celery ribs, chopped
- 1 med. tomato, diced
- 1 small onion, chopped
- 1 med. carrot, finely chopped
- 1/4 cup minced cilantro
- 1 can (14.5 oz) diced tomatoes, drained
- 1/2 cup water
- 1/2 cup tomato sauce
- 1/3 cup tomato paste
- 3 garlic cloves, minced
- Handful of pickled jalepenos, finely chopped
- 1 T. lemon juice
- 1 t. salt
- 1/2 t. pepper
Mashed Cauliflower and Cheese

This wonderful side dish tastes a lot like yummy mashed potatoes! My family loves it!
- 1 large head cauliflower, finely chopped
- 1 cup chicken stock
- 2 T. roasted garlic
- 1/2 t. salt
- 1/4 t. pepper
- 1/8 cup milk
- 2 T. butter
- 1 cup Cheddar or Velveeta
- 1/4 cup Parmesan
- 2 T. chopped chives
Fabulous Fettuccine

In a skillet, cook bacon until crisp
- 1/2 pound sliced bacon, diced
- 3 tablespoons olive or vegetable oil
- 1 large onion, chopped
- 3 pounds fresh tomatoes, peeled, seeded and chopped or 2 cans (14 1/2 oz each) diced tomatoes, undrained
- 3 garlic cloves, minced
- 2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Pinch cayenne pepper
- 1 teaspoon sugar
- 1/4 cup minced fresh parsley
- 1 pound fettuccine
- Shredded Parmesan cheese
Peas and Prosciutto

Directions Heat oil in a large saute pan over medium heat
- 1/4 cup Flavored Olive Oil (recipe follows)
- 1/2 cup finely chopped onion
- 1/2 cup diced prosciutto
- 1 15 -ounce cans green peas, drained, or 2 cups fresh peas, cooked
- 1 cup chicken broth
- Salt and pepper to taste

- 2 1/2 to 3 lb. beef chuck roast, cut into 2-inch pieces
- 1 1/2 cups red wine
- 2 can (10.5 oz.) can beef consomme
- 1 1/2 cups frozen pearl onions (or 1 cup chopped yellow)
