Cinnamon French Toast Bake

delicious! Make the night before for easter brunch and reheat, uncovered @325 for ~20 minutes
- 1/4 C butter, melted
- 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
- 6 eggs
- 1/2 C heavy whipping cream
- 2 t ground cinnamon
- 2 t vanilla
- 1 C chopped pecans
- 1 C maple syrup
- Icing from cinnamon rolls
- Powdered sugar
Lemon-Blueberry Yogurt Loaf

This recipe will also yield about 12 standard muffins or 36 miniature muffins, baking time adjusted
- For the Loaf:
- 1 1/2 cups + 1 tablespoon all-purpose flour, divided
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 cup plain whole-milk yogurt
- 1 cup sugar
- 3 large eggs
- 2 teaspoons grated lemon zest (approximately 2 lemons)
- 1/2 teaspoon pure vanilla extract
- 1/2 cup vegetable oil
- 1 1/2 cups blueberries, fresh or frozen, thawed and rinsed
- For the Lemon Syrup:
- 1/3 cup freshly squeezed lemon juice
- 1/3 cup sugar
- For the Lemon Glaze:
- 1 cups confectioners’ sugar, sifted
- 2 to 3 tablespoons fresh lemon juice

- 3 Tablespoons maple syrup
- 2 teaspoons lemon or orange zest
- 1 Tablespoons fresh lemon or orange juice
- 1 teaspoon poppy seeds
- 4-6 cups prepared fresh fruit, such as oranges, apples, grapes, strawberries, cut in bite sized pieces
Rachael Ray's Mac & Cheese

Heat a medium, deep skillet over medium heat
- 1 tablespoon vegetable or olive oil, 1 turn of the pan in a slow stream
- 2 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups whole or 2 percent milk
- 3 cups shredded white cheddar cheese
- 1/2 teaspoon nutmeg, ground or freshly grated
- 1/4 teaspoon ground cayenne pepper, a couple pinches
- Salt
- 1 pound elbow macaroni, cooked 8 minutes or to al dente, with a little bite to it
Mint Chip Ice Cream Brownie Squares

- 1 box brownie mix, baked in 9×13 inch pan (check sizes on back of box)
- 1 1/2 quart mint chip ice cream
- 1 cup chocolate chips
- 1/2 cup cream (heavy or regular)
- 1/4-1/2 teaspoon pure peppermint extract
- 15-20 oreo cookies
- 1 8-ounce container whipped topping
- optional: green food coloring, shaved or curled chocolate or sprinkles
Browned Butter M&M Cookies

Add one stick of butter to a medium skillet over medium heat
- 1 cup (2 Sticks) Salted Butter
- 1 cup Brown Sugar, Packed
- 1/2 cup Sugar
- 2 whole Large Eggs
- 1 Tablespoon Vanilla
- 2 cups All-purpose Flour
- 2 Tablespoons (additional) All-purpose Flour (rounded Tablespoons)
- 2 teaspoons (heaping) Instant Coffee Granules
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 cups M&M's, Plus Extra For Tops
- Chopped Pecans (optional)
- Semi-sweet Chocolate Chips (optional)
Spinach Chicken Enchiladas

Great to freeze
- 6 flour tortillas (we used whole wheat but you can also use flour)
- 1 pound of cooked and shredded chicken (click here for my perfect chicken)
- 1 box of frozen spinach (defrosted and all of the excess water squeezed out)
- 1 can of cream of chicken soup
- 8 to 10 green onions, chopped
- 1 cup of tomatillo or green chile salsa
- 1 cup Monterey Jack cheese, shredded
Fancy Macaroni & Cheese

Preheat oven to 350 degrees
- 4 cups Macaroni
- 8 Tablespoons Butter (Salted Butter)
- 2 whole Medium Onions, Cut In Half And Sliced Thin
- 10 slices Regular Bacon
- 1 Tablespoon Bacon Grease (reserved From Bacon Slices)
- 1/4 cup All-purpose Flour
- 2 cups Whole Or 2% Milk
- 1/2 cup Half-and-half
- 2 whole Egg Yolks, Beaten
- Salt And Pepper, to taste
- 1/2 cup Grated Gruyere Cheese
- 1/2 cup Grated Fontina Cheese
- 1/2 cup Grated Parmigiano Reggiano Cheese
- 4 ounces, weight Chevre (soft Goat Cheese)
Jena's Chocolate Chip Cookies

PREHEAT oven to 375° F. COMBINE flour, baking soda and salt in small bowl
- 3 (to 3 1/4) cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 1 cup packed brown sugar
- 1 1/2 teaspoon vanilla extract
- 2 large eggs
- 2 cups (12-oz. pkg.) chocolate chips

- 11-1/4 oz. (2-1/2 cups) all-purpose flour
- 2 Tbs. sugar
- 1/2 tsp. salt
- 8 oz. (16 Tbs.) unsalted butter, cut into 1/2-
- inch pieces and chilled
- 5 oz. (about 2/3 cup) ice water
