Mom's Famous Pumpkin Bread

Sift together dry ingredients
- 3 C sugar
- 3 1/2 C flour
- 1/2 t ground cloves
- 1 T cinnamon
- 1 t nutmeg
- 2 t baking soda
- 2/3 C water
- 1 C salad oil
- 4 eggs
- 2 C canned pumpkin (16 oz.)
- chocolate chips, optional
World's Best Peanut Butter Fudge

Spray a 9x13 inch baking dish with non-stick spray
- 4 cups white sugar
- 1 cup milk
- 1/2 cup butter
- 1 (7 ounce) jar marshmallow creme
- 1 1/2 C smooth peanut butter
- 2/3 cup all-purpose flour
- 1/4 t vanilla
To Die For Blueberry Muffins

Preheat oven to 400 degrees
- Muffins:
- 1 1/2 C all-purpose flour
- 3/4 C white sugar
- 1/2 t salt
- 2 t baking powder
- 1/3 C vegetable oil
- 1 egg
- 1/3 C milk
- 1 C fresh blueberries
- 1/2 C white sugar
- 1/3 C all-purpose flour
- 1/4 C butter, cubed
- 1 1/2 t ground cinnamon
- Crumb Topping Mixture:
- Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Racheal Ray's Mac & Cheese with Chicken & Broccoli

- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 1 pound chicken breast tenders, chopped
- Salt and pepper
- 1 small onion, chopped
- 1 pound macaroni elbows or cavatapi corkscrew shaped pasta twists or ziti
- 2 1/2 cups raw broccoli florets, available packaged in produce department
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon cayenne pepper
- 1 teaspoon paprika
- 3 cups whole milk
- 1 cup chicken stock
- 1 tablespoon prepared Dijon mustard
- 3 cups yellow sharp Cheddar
- 1 C Velveeta
- 1 bag Oscar Meyer bacon bits

- 6 large eggs
- Salt & pepper, to taste
- 6 English muffins
- 6 slices sharp cheddar cheese
- 18 small slices deli ham
- Plastic wrap
Chicken Chickpea Chopped Salad

In a large bowl add lettuce, top with all ingredients except for avocado and BBQ dressing
- 2 large romaine hearts, washed and chopped
- 1 cup pulled cooked chicken breast
- 1 (15.5 oz) can chickpeas, rinsed and drained
- 1 cup grape tomatoes, sliced in half
- 3/4 cup sweet corn (I grilled mine)
- 1/4 cup crumbled goat cheese
- 1/3 cup cilantro, washed and chopped
- 1 small avocado, diced
- 1/2 cup BBQ dressing, if desired
