- 2 medium yellow onions
- 1 clove garlic
- 3-4 pound boneless pot roast (or flank steak)
- 1 1/2 cups dried fruit
- 1 1/2 dried apple rings
- 1 bay leaf
- 3/4 c pale ale
- 1 c water
- (or substitute vegetable broth for ale and water)
- 1/4 c packed brown sugar
- 1/4 tsp ground cinnamon
- 2 tsp salt
- 1/4 tsp ground black pepper

Preheat oven to 350 F / 176 C Drain sliced peaches in a large mesh sieve and reserve 1 cup of syrup
- Prep Time: 10 minutes
- Cook Time: 35 minutes
- Total Time: 45 minutes
- 2 29 ounce cans sliced peaches in syrup (drain and reserve 1 cup of syrup)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1 cup cane sugar
- 1 cup gluten-free all purpose flour blend (Gluten-Free Pantry All Purpose Baking Flour used)
- 1 3/4 teaspoons gluten-free baking powder
- 1/2 teaspoon salt
- 1 large egg
- 6 tablespoons melted unsalted butter
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon cane sugar mixed with 1/4 teaspoon ground cinnamon for topping

Yummy roast broccoli

Preheat the oven to 425. Put the broccoli on a cookie sheet
- 4 to 5 pounds of broccoli (two large bunches), cut into large florets and thoroughly dried
- 5 Tbs olive oil
- 1 1/2 tsps kosher salt
- 1/2 tsp fresh ground pepper,
- 4 garlic cloves, peeled and sliced
- lemon zest and juice
- 1/3 cup freshly grated Parmesan cheese
Fruit-nut protein bars

Mix wet ingredients and the dried fruit
- While toasting, combine:
- 1/8 -1/8 cup slivered almonds and 1 cup of gluten free oats toasted on a jelly roll pan at 350 for about 10 minutes (or untoasted pepitas and quinoa flakes)
- 1 -1 mashed medium banana
- 4 -4 oz unsweetened applesauce
- 1/2 -1/2 c diced dried fruit (cranberries, apricots, and cherries are good)-I let this sit in the wet ingredients to plump a bit
- 1 -1 tsp vanilla
- 1/2 -1/2 cup egg white or egg white powder
- 1 -1 TBSP coconut oil (you may need to melt this a little first if it’s in solid form)
- Combine all of the above wet ingredients. To that add:
- 1/2 -1/2 tsp stevia (Powder form. Adjust amount if using concentrate)
- 3 -3 scoops of soy/hemp/rice protein powder (measures about 1 cup)
- 2 -2 tsp cinnamon
- 1 -1 tsp salt
- -The pepitas and quinoa flakes, or the toasted oats and almonds from the oven

Sautee herbs, veggies and chicken
- 2 cups mini lentils
- 1 carton broth
- 2 cloves garlic, minced
- 1 yellow onion, chopped
- 1/4 bunch parsley, minced
- 4 big leaves basil, minced
- 1 tsp chimichurri sauce (olive oil, garlic, balsamic, red wine, parsley, peppers, salt, pepper)
- 1 zucchini, sliced and quartered
- 1 chicken breast, opt.
