  • CRUST
  • 2 cups cooked quinoa, soaked and/or sprouted if possible. Note 1 cup dry= about 2 cups cooked.
  • 1 egg, beaten
  • 2 Tbsp gluten free flour (eg. oat, buckwheat, quinoa)
  • 1 Tbsp extra virgin olive oil
  • 1 tsp dried basil
  • 2 tsp dried oregano
  • 1/4 -1/2 tsp salt, I used 1/2 tsp for a saltier crust
  • 1/4 tsp black pepper
  • FILLING
  • 2 cups broccoli, cut into small pieces (about 1-2” pieces)
  • 1 red bell pepper, finely chopped
  • 1/4 tsp salt
  • 1/4 cup hemp milk (any milk will work)
  • 1/3 cup sundried tomatoes, finely chopped (look for sundried tomatoes with no added ingredients)
  • 1/4 white onion, diced
  • 5 eggs

Heat oil in heavy large pot over medium heat

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 28-ounce can diced tomatoes in juice (or 3.5 c chopped)
  • 1 pound Kabocha or butternut squash, halved, seeded, peeled, cut into 1/2-inch pieces
  • 4 ounces green beans, trimmed, cut into 1-inch pieces
  • 1 15- to 16-ounce can black beans, rinsed, drained (2 c)
  • 1 tablespoon minced seeded jalapeno
  • 1/2 cup chopped fresh cilantro (or 1/6 c fresh rosemary and oregano)
  • 1 pound fresh fish

Combine the 2 tablespoons vinegar, wine, salt and pepper with the cooked shallots and reduce

  • GRILLED RED SNAPPER WITH LIME BUTTER SAUCE AND GRILLED PINEAPPLE
  • 4 fillets of red snapper
  • 8 very thin slices of pineapple, peeled and cored
  • Rind of one lime (Peel with potato peeler, being sure to remove only the green rind and none of the white pith. Cut into pieces the size of matchsticks and blanch in boiling water for 2 minutes.)
  • 2 tbsp. vinegar
  • 2 shallots, chopped fine and sauteed in butter
  • V4 cup white wine
  • 8 oz. plus a tbsp. (for sauteing the shallots) unsalted butter
  • Salt and pepper

I used a 4 qt round crockpot for this---it was the perfect size

  • CORNBREAD TOPPING:
  • 1 pound of cooked, or practically cooked chicken, cubed or shredded (I browned my chicken for a while on the stove, then lost interest. It was almost cooked, but not yet edible.)
  • 1 small sweet potato, peeled and cut in 1-inch chunks (optional.)
  • 1 red onion, diced (optional. I didn't use this, although I intended to, and am kind of kicking myself for the accidental omission.)
  • 1 cup frozen or fresh corn
  • 1 bottle of your favorite barbecue sauce (18 oz)
  • 1/4 cup hot water
  • use a mix and follow the directions on the box (minus the oil or butter), or mix together the following:
  • 3/4 cup corn meal
  • 1 1/4 cups of flour (I used a Bob Red's Mill GF mix--we were out of Pamela's)
  • 1 cup milk
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp baking powder (only if using regular all-purpose flour)
