Blueberry Muffins

Beat wet ingredients. Mix and add dry ingredients, mix lightly
- 1/4 c oil or margarine
- 1 egg
- 3/4 c milk
- 1 t vanilla
- 1/2 c sugar
- 1 3/4 c flour
- 3 t baking powder
- 1/2 t salt
- 1/3 c pecans
- 1 c blueberries (if frozen, do not thaw)
- try: substitute
- 1/2 c stewed plums/applesauce/ripe banana
- 1/2 c flax seed
- 2 T veg oil
Honey Barbecue Pork Ribs

- 8 pounds pork spareribs or baby back ribs, cut into serving pieces of 3 to 4 ribs.

- OPTIONAL:
- 3/4 c sugar
- 2 T vegetable oil
- 2 large eggs
- 1/2 c stewed plums/ripe banana
- 1/2 c flax seed
- 2 c all purpose or GF flour
- 1 1/4 t baking soda
- 1 t cinnamon
- 1/4 t salt
- 1 1/2 c finely shredded zucchini (about 1 medium)
- 1/2 c semisweet chocolate chips
- 1/3 c pecans
- substitute 3 T veg. oil and 1 c applesauce for the plums, flax seed and 2 T oil

Preheat oven to 350 degrees
- 1/2 c oil
- 1 c sugar
- 3 eggs
- 3 smashed bananas
- 1 t vanilla
- 2 c flour
- 1 t baking soda
- 1/4 t salt
- 1/4 c chopped nuts
- 1/4 c chocolate chips
- 1/4 c dried cherries
- OPTIONAL: substitute applesauce for butter and sugar
Flourless Chocolate Cake

Preheat the oven to 350ºF
- Ingredients:
- 16 16 16 oz. Belgian dark chocolate (or use your favorite dark chocolate bars)
- 1 1 1 cup organic light brown sugar, packed
- 1/2 1/2 3/4 cup organic white cane sugar 3/4 cup very hot strong coffee (or use espresso powder in very hot water)
- 2 2 2 sticks unsalted butter, room temperature, cut into pieces
- 2 2 2 tablespoons unsweetened organic cocoa powder
- 8 8 8 large organic free-range eggs, at room temperature
- 1 1 1 tablespoon bourbon vanilla extract- yes, a tablespoon!
Slow Cooker Beef Stew Recipe

When there's a chill in the air, nothing beats this stew
- 1-1/2 pounds potatoes, peeled and cubed
- 6 medium carrots, cut into 1-inch slices
- 1 medium onion, coarsely chopped
- 3 celery ribs, coarsely chopped
- 3 tablespoons all-purpose flour
- 1-1/2 pounds beef stew meat, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 cup beef broth or red wine
- 1 teaspoon ground mustard seed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon worchestershire
Inside Out Chinese Spring Roll Salad

Soak the bean threads in warm water to cover for 10 minutes or till pliable
- Dressing:
- 2 oz Bean Thread, mung bean noodles
- 3 cups Shredded Napa Cabbage
- 1 cup Torn Watercress
- 1 Carrot, cut into matchstick thin strips
- 1/2 cup Seedless Cucumber, cut into matchstick thin strips
- 1/2 cup Red Bell Pepper, cut into matchstick thin strips
- 1 Green Onion, minced
- 1 cup Chopped Baby Corn
- 2 Tbsp Snipped Cilantro
- 2 Tbsp Snipped Mint
- Optional: sliced chicken, slivered almonds
- 1 Tbsp Sesame Oil
- 2 Tbsp Sweet Chili Sauce
- 2 Tbsp Lime Juice
- 1 tsp Soy Sauce
- 1 tsp Minced Ginger Root
- 1 Large Clove Garlic, crushed
- 1/2 tsp Lime Zest
- Optional: 1 TBL peanut butter, 1 TBL rice wine vinegar

Couscous Quinoa with Mint and Tomatoes

1. Place the quinoa in a fine-mesh strainer and rinse well under cold running water
- 1 ¼ teaspoons sea salt
- 1 cup couscous
- 2 ¼ teaspoons ground cumin
- 1 1/8 teaspoons ground coriander
- 1 cup finely chopped fresh flat-leaf parsley
- 1 cup finely chopped fresh mint
- 2 small English cucumbers, peeled, seeded, and diced
- 1 cup diced tomatoes or halved cherry tomatoes
- Zest of 1 lemon (about ½ teaspoon) (or orange)
- ¼ cup fresh lemon juice (or orange)
- 3 tablespoons extra virgin olive oil
- 2 scallions, green part only, finely chopped, for garnish
