This Coconut Cream Pie came out perfect for this Thanksgiving

  • TOPPING:
  • 1 1/4 cups of all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cups of chilled unsalted butter
  • 4 tablespoons ice water
  • 2 cups flaked sweetened coconut toasted in 300°F oven till brown
  • FILLING:
  • 16 ounces Mascarpone cheese
  • 1 quart Heavy Cream
  • 1 cup sugar
  • 4 tablespoons Vanilla Extract
  • Pinch salt
  • (you can use a store bought prepared crust as well, like a deep dish crust, or Trader Joes crust)
