Coconut Cream Pie (Thanksgiving)

This Coconut Cream Pie came out perfect for this Thanksgiving
- TOPPING:
- 1 1/4 cups of all purpose flour
- 1/4 teaspoon salt
- 1/2 cups of chilled unsalted butter
- 4 tablespoons ice water
- 2 cups flaked sweetened coconut toasted in 300°F oven till brown
- FILLING:
- 16 ounces Mascarpone cheese
- 1 quart Heavy Cream
- 1 cup sugar
- 4 tablespoons Vanilla Extract
- Pinch salt
- (you can use a store bought prepared crust as well, like a deep dish crust, or Trader Joes crust)

- Chicken Gyros:
- 2 chicken breasts, cut into strips
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons garlic, chopped
- 1 teaspoon oregano {dried}
- 1/2 teaspoon cumin
- 1/2 teaspoon onion {powder}
- 1 teaspoon salt
- Tzatziki Sauce:
- 1 cup cucumber, finely chopped
- 1/2 cup greek yogurt
- 1/4 cup sour cream

- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/4 teaspoon salt

In a deep, large, heavy pot over moderate heat, saute garlic and pancetta in extra-virgin olive oil for 3 minutes
