Beecher's Flagship Cheese Sauce

Melt the butter in a heavy bottomed saucepan over medium heat and whisk in the flour
- 1/4 cup unsalted butter (1/2 stick)
- 1/3 cup all-purpose flour
- 3 cups milk
- 14 ounces Beecher’s Flagship Cheese, grated (about 3 1/2 cups)
- 2 ounces Beecher’s Just Jack cheese, grated (1/2 cup)
- 1/2 teaspoon kosher salt
- 1/4 -1/2 teaspoon chipotle chili powder
- 1/8 teaspoon garlic powder
Zuppa Toscana Soup

In a skillet over med-high heat, brown sausage, breaking into small pieces as you fry it; drain and set aside
- 1 lb spicy Italian Sausage (crumble finely when cooked)
- 1/2 lb bacon or 1/2 cup real bacon bits
- 2 cups water
- 2 14.5 oz cans chicken broth
- 2 large potatoes - cubed with peeling
- 2 large garlic cloves - crushed
- 1 medium onion - chopped
- 2 cups chopped kale or Swiss chard (I use kale)
- 1 cup heavy whipping cream
- salt and pepper to taste
Carne Asada

Mix together all the ingredients above into a bowl
- 2.5-3 lbs. flank steak
- 1/4 c white vinegar
- 4 cloves garlic, chopped
- juice of 2 limes
- 1/3 C olive oil
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika
- 1/4 C chopped fresh cilantro
- For garnish: chopped onion and cilantro

- 3 eggs beaten
- 2/3 c. sugar
- 1 c. syrup
- 1 t. vanilla
- 1 c. pecans
- 1/4 t. salt
- 1/4 c. melted margarine
Southwestern Soup

Brown ground beef, onion, and garlic in a large Dutch oven over medium-high heat, stirring often, 10-12 min
- 1 lb. ground beef
- 1 c. coarsely chopped onion
- 2 garlic cloves, minced
- 2 (16 oz.) cans light red kidney beans, rinsed and drained
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes and mild green chilies, undrained
- 1 (14.5 oz.) can petite diced tomatoes and jalapenos, undrained
- 1 (14 oz.) can beef broth
- 2 c. frozen yellow and white whole kernel corn
- 1 (1 oz.) envelope taco seasoning mix
- 1/4 t. salt
- 1/4 t. pepper
- 2 T. chopped fresh cilantro
- toppings: sour cream and chopped fresh cilantro
Nappa Soup

Mix dressing ingredients in a bowl
- Dressing:
- Big head Nappa cabbage, cut up into small pieces
- 1/2 c. sliced Almonds
- 1/2 bag croutons
- 1 pkg. Ramen Noodles
- 1/2 c. oil
- 3 T. white vinegar
- 3 T. sugar
- 1/2 t. pepper
- 1 t. garlic salt
- seasoning packet
Pull-Apart Sweet Loaf

Preheat oven to 400° F. Combine sugar, butter, and honey in a small saucepan
- 1 (16 oz.) loaf King's Hawaiian Sweet Bread
- 3/4 cup dark brown sugar
- 6 tbsp. butter or margarine
- 3 tbsp. honey
- 1/4 cup flaked coconut
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
Triple Chocolate-Peanut Butter Pudding Cake

1. Lightly coat the inside of a 3 1/2- or 4-quart slow cooker with cooking spray; set aside
- Nonstick cooking spray
- 1 cup all-purpose flour
- 1/3 cup sugar
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 cup chocolate milk or regular milk
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla
- 1/2 cup peanut butter-flavor pieces
- 1/2 cup semisweet chocolate pieces
- 1/2 cup chopped peanuts
- 3/4 cup sugar
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups boiling water
- Vanilla ice cream (optional)
- Chocolate bar pieces (optional)
