Paula's Volcano Cake

Cream mixture: Beat ingredients together with an electric mixer
- Cream mixture:
- 1 8-ounce softened cream cheese
- 1 stick butter, room temperature
- 2 cups 4X or 10X sugar
- Cake:
- 1 cup sweetened coconut flakes
- 1 cup pecans
- 1 (18.25-ounce) box German chocolate cake mix, prepare by following directions on box
- 10 bite-sized almond and chocolate covered candy or any candy of choice
- Glaze:
- 4 tablespoons butter
- 1/4 cup cocoa powder
- 1/2 cup milk
- 1 1/2 cups confectioners' sugar
- 1/2 teaspoon almond extract

Combine all ingredients except sprite or soda water
- 2 bottles dry red wine
- 1 1/2 cups brandy (inexpensive- E&J Works)
- 1/2 cup triple-sec
- 2 cups orange juice
- 2 cups cranberry juice
- 1 1/2 cups sugar
- chopped fruit- oranges, grapes, apples, etc...
- sprite or soda water
Dirty Rice with Shrimp and Spicy Sausage

1. Preheat oven to 450 F 2
- Dirty Rice:
- 2 cups White Long Grain Rice
- 4 cups Water
- 2 tablespoons Morton Season-All Seasoned Salt
- 1 can Diced Tomatoes
- 2 tablespoons Unsalted Butter
- Shrimp and Sausage:
- 1 1/2 pounds 26-30 Shrimp, Peeled and Deveined
- 4 tablespoons Morton Season-All Seasoned Salt
- 4 links Spicy Italian Sausage
Carrot Cake

Carrot cake and cream cheese frosting
- 2 c. flour
- 2 t. baking soda
- 1 t. cinnamon
- 1 t. salt
- 1/2 c. oil
- 3 eggs beaten
- 2 c. sugar
- 2 c. grated carrots
- 1 1/2 c. crushed pineapple
- 1 c. coconut (drained)
- 1 c. chopped walnuts
- 2 t. vanilla
- Cream Cheese Frosting
- 8 oz. cream cheese, softened
- 1 lb. powdered sugar
- 2 t. vanilla
- 1 stick butter
White Chicken Chili

In a large cooking pot, saute onion in a little butter to soften
- 1 large red onion, finely chopped
- 1 c. or more of cooked chicken (of 2 cans of chunk chicken) - I like rotisserie chicken
- 2 cans White Kidney beans or Great Northern beans
- 1 can petite diced tomatoes with green chiles
- 2 cans campbell's cream of chicken soup with herbs
- 2 cans of water
- 1 pkg. of McCormick's White Chicken mix (1 can only find at marsh)
Peanut Butter Sheet Cake

1. Preheat the oven to 350 degrees F
- 2 cups all-purpose flour
- 2 cups white sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup water
- 3/4 cup butter or margarine, softened
- 1/2 cup peanut butter
- 1/4 cup vegetable oil
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2/3 cup white sugar
- 1/3 cup evaporated milk
- 1 tablespoon butter or margarine
- 1/3 cup chunky peanut butter
- 1/3 cup miniature marshmallows
- 1/2 teaspoon vanilla extract
Crescent- Cream Cheese Rolls

Preheat oven to 350 deg. Grease 13 x 9 inch pan
- 2 cans Crescent Rolls
- 2 (8 oz.) pkg. cream cheese
- 1 c. sugar
- 1 t. vanilla extract
- 1 egg
- Glaze
- 1/2 c. powdered sugar
- 2 T. milk
- 1/2 t. vanilla extract
Good for you Greek Salad

In shallow salad bowl, or on serving platter, combine tomatoes, cucumber, and onion
- 3 large ripe tomatoes, chopped
- 2 cucumbers, peeled and chopped
- 1 small red onion, chopped
- 1/4 cup olive oil
- 4 teaspoons lemon juice
- 1 1/2 teaspoons dried oregano
- salt and pepper to taste
- 1 cup crumbled feta cheese
- 6 black Greek olives, pitted and sliced
Buffalo Chicken and Potato Casserole

Heat oven to 350°F. Spray 13x9-inch baking dish with cooking spray
- 1 1/4 lb boneless skinless chicken breasts, cut into 1-inch strips
- 1/3 c. Franks buffalo sauce
- 6 c. potatoes, grated w/ box grater
- 1 c. light ranch dressing
- 1/2 c. cheddar cheese, shredded
- (10 oz) condensed cream of chicken soup
- 1/2 c. panko

- FILLING (for 1 stromboli):
- 1 (.25-ounce) package active dry yeast
- 1 1/3 cups warm water (110°F to 115°F)
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- 4 to 5 cups all-purpose flour
- 1/4 pound thinly sliced ham
- 1/4 pound reduced fat pepperoni
- Dried basil
- Dried oregano
- 4 slices provolone cheese
