Berry Cheesecake Parfait

Beat cream cheese with mixer until creamy
- 1 pkg (8oz) Philly cream cheese, softened
- 1 1/2 cups cold milk
- 1 pkg (3.4oz) Jello vanilla flavor instant pudding
- 1 1/2 cups thawed Cool Whip topping, divided
- 24 Nilla Wafers, coarsely chopped
- 1 1/2 cups seasonal berries
Strawberry Cloud

In a saucepan over medium heat, cook and stir gelatin, pudding mix and water until mixture boils, about 15 minutes
- 1 pkg (3oz) strawberry gelatin
- 1 pkg (3oz) cook and serve vanilla pudding mix
- 2 1/2 cups water
- 1 carton (8oz) frozen light whipped topping, thawed
Hot Chocolate Mix

Mix ingredients well and store in air tight container until you're ready to make the individual gift packages
- 3 cups powder sugar
- 8 oz non-fat dry milk
- 1 16oz instant chocolate milk (Nestle's)
- 1 6oz Creamora (or any non-dairy creamer)
- 1 box instant chocolate pudding (see note below)

Chicken Enchilada Casserole

Combine first 4 ingredients; stir well
- 1/2 cup no salt added salsa
- 1/2 cup canned low sodium chicken broth, undiluted
- 1 tsp ground cumin
- 3 (8oz) cans no salt added tomato sauce
- 3 cups cubed cooked chicken breast (skinned before cooking and cooked
- without salt)
- 3 Tbsp chopped pickled jalapeno peppers
- 1 (15oz) can no salt dded black beans, rinsed and drained
- 12 (6 inch) corn tortillas
- 1 1/2 cups (6oz) shredded reduced fat sharp cheddar cheese
- 1/2 cup (2oz) shredded reduced fat Monterey Jack cheese
- 3/4 cup low fat sour cream
- 1/2 cup chopped green onions

- 1 cup fresh baby spinach
- 2 medium yellow tomatoes, sliced
- 2 medium red tomatoes, sliced

- 1/4 tsp salt
- 1/4 tsp pepper

Creamy Fettuccine with Peas

- 3/4 cup evaporated skimmed milk
- 1 1/2 tsp all purpose flour
- 1/2 cup freshly grated Parmesan cheese
- 1/4 tsp salt
- 1/2 cup frozen peas, thawed
- 1/4 tsp freshly ground pepper
