Cut jalapenos in half lengthwise, leaving stems intact; discard seeds
- 12 jalapeno peppers
- 1/2 lb. lean ground turkey or chorizo sausage taken out of casing
- 1/4 cup finely chopped onion
- 4 oz fat free cream cheese
- 1 1/3 cups shredded part skim mozzarella cheese, divided
- 1 Tbsp minced fresh cilantro
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/8 tsp salt
- 1/8 tsp pepper
Jumbo Pumpkin Pecan Muffins

In large bowl, combine the firs seven ingredients
- TOPPING:
- 2 1/2 cups all purpose flour
- 1/2 cup sugar
- 1/4 cup packed brown sugar
- 2 tsp pumpkin pie spice
- 1 tsp baking powder

- 1/2 tsp salt
- 2 eggs
- 1 cup canned pumpkin
