Mediterranean Meatballs (Spinach & Feta Keftedes)

Preheat oven to 400. Line a baking sheet with parchment paper
- 2 eggs, beaten
- 1.5 C. baby spinach, chopped
- (3.5 cups whole)
- 1 small bunch fresh mint,
- chopped
- 1 small red onion, finely
- chopped
- 3 cloves garlic, minced
- 2 lbs ground turkey (any
- ground meat will work)
- salt & pepper to taste
- 2/3 C feta, cubed small
- Tsatziki
Apple, Cranberry Almond Slivers Coleslaw (Ronna Pope)

Mix all ingredients together and serve
- 2 Bags Slaw Mix
- 2 Gala Apples, Cut into sticks
- 1 C. Dried Cranberries (or
- other dried fruit)
- 1 Small Bag Almond Slivers
- 1/2 Jar Marzetti Slaw Dressing
- 1/2 Jar Marzetti Poppy Seed
- Dressing
White Bean Hummus

Add the beans and minced garlic to the bowl of a food processor
- 1 15oz can white beans
- (recommend butter beans)
- Drain and Rinsed
- 1 garlic clove, minced
- 1 ice cube (or more to thin
- the mixture down)
- 1/4 C. tahini, well stirred
- 1 tsp cumin
- 1/2 tsp coriander
- 1 tsp Aleppo pepper or 1/2
- tsp crushed red pepper
- flakes
- Kosher Salt
- Juice of 1/2 lemon, more to
- your liking
- Virgin Olive Oil, to serve
Spinach Herb Chicken Meatballs with Zoodles

Preheat the oven to 350 degrees and line a rimmed baking sheet with parchment paper
- 1 lb grd chicken, 90% lean
- 1 C. baby spinach, chopped
- 2 tsp dried basil
- 2 tsp dried chives
- 2 tsp dried parsley
- 1/4 C. walnuts, finely ground
- into crumbs in food processor
- 1 tsp crushed red pepper
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- Marinara Sauce
- 4 medium zucchini
- Olive oil cooking spray
Weeknight Bolognese Sauce

Heat 2 Tbsp of olive oil in a large 12 inch skillet over medium high heat
- 2 Tbsp good olive oil, plus to
- cook the pasta
- 1 lb lean grd sirloin
- 4 tsp minced garlic (4 cloves)
- 1 Tbsp dried oregano
- 1/4 tsp crushed red pepper
- flakes
- 1 1/4C dry red wine, divided
- 1 (28oz) can crushed
- tomatoes, San Marzano
- 2 Tbsp tomato paste
- Kosher Salt and fresh grd
- black pepper
- 3/4 lb dried pasts, such as
- orecchiette or small shells
- 1/4 tsp grd nutmeg
- 1/4 C chopped fresh basil
- leaves, lightly packed
- 1/4 C heavy cream
- 1/2 C freshly grated
- Parmesan cheese, for serving
Best Ever Crockpot Cowboy Beans (Amy Fischer)

In a large skillet, cook the ground beef and onions until the meat is no longer pink; drain
- 1 lb grd beef
- 1 lb bacon, cooked and crumbled
- 2 Tbsp bacon drippings
- 3 (15oz) cans kidney beans
- 3 (15oz) cans white beans
- 3 (15oz) cans pork & beans
- 3 small onions, diced
- 1 C. light brown sugar
- 1 C. ketchup
- 1/2 C molasses
- 3 Tbsp yellow mustard

- 3 C. sour cream

- 2 C cheddar cheese,
- shredded
- 3 green onion, sliced

Southwest Stuffed Sweet Potato

Preheat oven to 400. Bake sweet potatoes 45-50 minutes, or until easily pierced with a fork
- 6 Med Sweet Potatoes
- 1 C white or brown rice
- 2 Tbsp olive oil
- 1 small onion , diced
- 1 C diced bell pepper, any color
- 2 cloves garlic, minced
- 1/3 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2tsp chili pepper
- 1 tsp cumin
- 1/2 tsp grd coriander
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper or
- more
- 1-15oz black beans, drained &
- rinsed
- 1 C Mexican style shredded
- cheese
- Opt Toppings: salsa, diced avocados, sour cream & chopped cilantro
