Spicy Molten Blue Cheese Dip

Step 1Preheat oven to 325 degrees
- 1 8-ounce package cream cheese
- 2 garlic cloves, minced
- 1 pinch kosher salt
- 1/4 cup heavy cream or half and half
- 1/4 cup mayonnaise
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce, more for serving if desired
- 1/4 teaspoon freshly ground black pepper
- 4 ounces blue cheese (about 1 cup, crumbled)
- 2 tablespoons chopped chives
- Celery sticks, chips or chicken wings, for serving
Parmesan Tortellini Bites

In a large pot of boiling salted water, cook tortellini according to package instructions; drain well
- 1 (9-ounce) package refrigerated three cheese tortellini
- 1/2 cup vegetable oil
- 1 cup Panko*
- 1/4 cup freshly grated Parmesan
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 cup marinara sauce

- 1/2 bottle(s) Lawrys Herb and Garlic Marinade
- 2 tablespoon(s) Pesto
- 2 Boneless Chicken Breasts
- 8 ounce(s) Penne Pasta 1/2 box
- 2 tablespoon(s) Olive Oil
- 3 clove(s) Garlic minced
- 2 tablespoon(s) Pesto
- 1/2 cup(s) chicken broth
- 8 ounce(s) Tomato Sauce
- 1 cup(s) half-and-half

Broiled Knockwurst in Beer

1.In a saucepan,simmer knockwurst in the beer very slowly 15 minutes
- 1.8 knockwurst
- 2.2 cups beer
- 3.2 tablespoons vinegar
- 4.2 teaspoons granulated sugar
Buffalo Chicken Enchiladas

1. In large bowl, mix chicken and buffalo wing sauce until coated
- 2 1/2 cups Cooked, Shredded Chicken--I prefer to boil my chicken when I want it shredded. It tends to shred much easier than baked. But, shredded baked or rotisserie chicken will work just fine.
- 1 3/4 cups Reserved Broth From Chicken, broth from a can is fine too
- 12 -18 whole Flour Tortillas--depends on how much you add. I always end up with a different number of enchiladas everytime I make them!
- 1 cup chopped celery
- 2 tablespoon canola oil or butter
- 1/2-1 cup of Buffalo Sauce -- I prefer Frank’s Buffalo Sauce, I don't recommend Hot Sauce of any kind though. The amount is going to depend on how spicy you want your chicken.
- 1/2 cups Heavy Cream
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 1 cup Sour Cream
- 1 Tablespoon Ranch dressing powder mix**
- 2 1/2 cups Sharp Cheddar Cheese, Grated
- Salt And Pepper, to taste

Preheat oven to 375 degrees
- 4 Tbsp extra virgin olive oil, divided
- 1/2 lb lean ground beef
- 1/4 cup finely chopped yellow onion
- 1 (28 oz) can crushed tomatoes
- 2 cloves garlic, minced
- 1 1/2 tsp dried basil*
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 1 (15 oz) container Ricotta Cheese
- 1 large egg
- 1/3 cup fresh flat leaf parsley (aka Italian Parsley, its about 1 small handful), chopped
- 2 1/4 cups freshly grated Mozzarella Cheese, divided
- 3/4 cup freshly, finely grated Parmesan Cheese, divided
- 1/3 cup freshly, finely grated Romano Cheese
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper

- 2 tall 12 oz can evaporated milk
- 1 1/2 cups sugar
