For the fritters Combine all the ingredients and mix until you have a smooth batter

- 1 cup pumpkin cooked and pureed
- 1 cup flour
- 2 teaspoon baking powder
- 2 tablespoon caster sugar
- 1 egg
- ¼ cup milk
- pinch of salt
- oil for deep frying
- For the Caramel Sauce
- ¾ cup sugar
- 1 cup cream
- 1 teaspoon vanilla extract
- 3 tbsp butter
- ½ cup golden syrup
- 1 teaspoon sea salt flakes
Crock Pot Potato Broccoli Cheese Soup

1In a 3 quart saucepan, melt butter and saute onions
- 1 tablespoon butter
- 1 cup onion, chopped
- 1 1/2 lbs potatoes, chopped into 3/4 inch cubes
- 2 1/2 cups boiling water
- 2 chicken bouillon cubes
- 1 (10 ounce) package frozen chopped broccoli
- 1 (6 ounce) package cheddar cheese, shredded
Autumn Minestrone Soup

Heat oil in an 8-quart stock pot over medium high heat
- 1 tablespoon olive oil
- 1 medium onion, cut into 1/2-inch pieces
- 2 stalks celery, sliced crosswise into 1/2-inch pieces
- 1/2 bulb fennel, cut into 1-by-1/4-inch pieces (about 1 1/2 cups)
- 2 medium Yukon gold potatoes, peeled and cut into 1-inch pieces
- 2 cloves garlic, finely chopped
- 1 can (35 ounces) whole tomatoes, lightly crushed
- 8 cups homemade or store-bought low-sodium chicken stock
- 1 can (15 ounces) cannellini beans, drained and rinsed
- Coarse salt and freshly ground pepper
- 2 teaspoons red-wine vinegar
- 1 1/2 bunches Swiss chard leaves, thinly sliced (about 6 cups)
- 2 cups cooked tubetti pasta, for serving
- Freshly grated Parmesan cheese, for garnish
Chickpea and Spinach Stew

Pour the water into a large deep skillet and bring to a boil
- 1 cup water
- 10 ounces baby spinach
- 2 large garlic cloves, crushed
- Kosher salt
- Pinch of saffron threads
- 2 teaspoons sweet paprika
- 1/4 teaspoon ground cumin
- Pinch of ground cloves
- Pinch of freshly ground pepper
- Two 15-ounce cans chickpeas with their liquid
- 1/4 cup extra-virgin olive oil
- 1 small onion, finely chopped
- 1 large tomato—peeled, seeded and coarsely chopped
- 1/4 cup golden raisins
- Crusty bread, for serving
Pasta with Chicken, Artichokes & Olives

cook the pasta according to package directions and drain thoroughly
- 1 lb ziti, fusilli, rotelle or another short pasta
- 1/4 cup olive oil, or more to taste
- 1/2 cup olives (pitted, if serving small children)
- two 6 oz jars artichoke hearts, drained
- 2 cups coarsely chopped or roughly shredded cooked chicken
- 1/4 cup grated parm cheese or to taste
- freshly ground black pepper
