LEMON GARLIC ROASTED CHICKEN

INSTRUCTIONS Preheat the oven to 275ºF
- 2 small or 1 large lemon ($0.30)
- 1/3 cup olive oil ($0.78)
- 6 cloves garlic ($0.48)
- 1/4 tsp salt ($0.02)
- Freshly cracked pepper ($0.05)

LOW COOKER HONEY-GARLIC BBQ PORK TENDERLOIN

Prepare the sauce in a medium saucepan
- 2 pork tenderloins (approx. 2 lbs – 1kg)
- 1 1/2 cups honey
- 3/4 cup reduced-sodium soy sauce
- 3/4 cup all-natural ketchup
- 5 cloves garlic, minced
- 1 tablespoon mustard
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon white vinegar (optional)
- 2 tablespoons olive oil
- Kosher salt and fresh cracked pepper
- Sliced parsley, for garnish (optional)
Vegetable Pad Thai

place noodles ina bowl and pour boiling water over them to cover, soak until softened, at least 15 mins
- 8 oz dried flat 1/4 inch thick rice noodles
- 5 tbsp vegetable oil, divided
- 3 large eggs, lightly beaten
- 8 oz extra firm tofu, drained, blotted dry cut into 1/2 inch thick slices
- 4 garlic cloves, minced
- 2 scallions, trimmed and sliced
- 1 cup fresh bean sprouts, divided
- 1/4 cup soy sauce
- 4 tsp ketchup
- 4 tsp granulated sugar
- 1/4 cup chopped dry roasted peanuts
- 1/4 cup chopped fresh cilantro
- 2 thai chilies, seeded and sliced (optional)
- 1 lime, cut into wedges
Parmesan Scalloped Potato Stacks

**Note: These are a bit on the messy side
- 2 garlic cloves
- 1 shallot
- 2 cups half and half *
- 1 cup + 1/2 cup Parmesan, freshly grated
- 1/2 tsp sea salt
- 1/4 tsp fresh ground black pepper
- 1 Tbs fresh thyme leaves

Spinach-Stuffed Pork Loin

- 1 (4-pound) pork loin, trimmed

- 1 (6-ounce) bag fresh baby spinach
- 1 1/2 cups panko (Japanese bread crumbs)

SLOW COOKER GUINNESS IRISH BEEF STEW

Cut the flank steak into large 1″ pieces
- 2 tablespoons extra virgin olive oil
- 2.5 lb flank steak
- salt & pepper
- 4 cloves garlic, minced
- 2 small yellow onions, coarsely chopped
- 4 slices thick cut bacon
- 2 tablespoons all purpose flour
- 14.9 oz can Guinness Draught Ale
- 1/4 cup tomato paste
- 4 medium carrots, peeled and chopped 1/2″ thick
- 1 pint small button mushrooms
- 3 large yellow potatoes, chopped into 1′ pieces
- 2-3 cups beef broth
- optional-1/4 cup butter and 1/4 cup flour to thicken stew

Chicken Broccoli Alfredo

Cook broccoli in boiling water for 5 minutes, drain well
- 10 ounces broccoli
- 8 ounces penne pasta (for gluten free, use gf brown rice penne)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1.5 pound chicken breast (1 large chicken breast)
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup milk
- 1 and 1/4 cups mozzarella cheese or monterey jack cheese, shredded
- salt and pepper, to taste
Spinach-Artichoke Dip Grilled Cheese

In a large skillet over medium heat, heat oil
- 1 tsp. extra-virgin olive oil
- 1 clove garlic, minced
- 2 c. baby spinach
- 1 15-oz. can artichoke hearts, drained and chopped
- 1 c. shredded Gruyere
- 4 oz. (1/2 block) cream cheese, softened
- kosher salt
- Freshly ground black pepper
- 2 tbsp. butter
- 4 slices bread
Salad Dressing

- 5 tbls Canola or Sunflower Oil
- 5 tbls Extra Virgin Olive Oil
- 4 tbsp white Wine Vinegar
- 1 tbsp sugar
- 1/2 tsp (generous) dijon mustard
- 1/4 tsp salt
- dash of pepper
Turkey and Wild Mushroom Meatloaf Patties with Pan Gravy

- Note: clean mushrooms with a damp cloth. Do not run directly under water.
- 3 tablespoons extra-virgin olive oil, 2 turns of the pan for the mushrooms, 1 turn for the patties
- 8 cremini mushrooms, (baby portobellos), chopped
- 8 shiitake mushrooms, chopped
- 1 shallot, chopped
- Salt and pepper
- 1 1/3 pounds ground turkey, the average weight of 1 package
- 3 or 4 sprigs fresh sage, leaves chopped, about 2 tablespoons
- 1 tablespoon Worcestershire sauce, eyeball it
- 1/2 cup Italian bread crumbs
- 1 egg, beaten
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken stock
- 1 teaspoon poultry seasoning
