Preheat the oven to 325 degrees F
- 1 tablespoon vegetable oil
- One 3-pound tri-tip roast
- Kosher salt and freshly ground black pepper
- 2 yellow onions, sliced
- 1 package onion soup mix

- For the crust:

- 1/4 tsp. vanilla

- 1/4 tsp. pumpkin pie spice (or allspice)

- 8 gingersnap cookies
- 1 graham cracker
- 1 1/2 tbsp. melted butter
- 1 1/2 tsp. brown sugar
- 1/4 c. pecans
- pinch of salt
- For the vanilla bean whipped cream:
- 1 c. heavy cream
- 1 tbsp. granulated sugar
- Seeds from 1/4 a vanilla bean
- Pumpkin pie spice for garnish

Lemon Chicken with Potatoes and Tomatoes

In a small glass baking dish, combine the lemon juice with the water, mustard and 2 tablespoons of the parsley
- 1/4 cup fresh lemon juice, plus 1 lemon—peeled, seeded and diced
- 1/4 cup water
- 1 tablespoon Dijon mustard
- 1/4 cup finely chopped parsley
- 2 skinless, boneless chicken breast halves (about 7 ounces each)
- 3/4 pound Yukon Gold potatoes, peeled and cut into 3/4-inch dice
- 2 tomatoes, cut into 1-inch dice
- 1 small sweet onion, such as Vidalia, cut into 1/2-inch dice
- 1 garlic clove, minced
- 2 tablespoons snipped chives
- 2 thyme sprigs
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
