Creamy Slow Cooker Mashed Potatoes

Place the potatoes, broth, garlic and butter into a 6qt slow cooker
- 5 pounds | 2.2 kg potatoes , peeled and cut into 1 1/2-inch pieces*
- 1 cup chicken broth / stock
- 4 cloves garlic , crushed
- 1/3 cup butter , diced (reduced fat if counting points or calories)
- good pinch of salt (adjust to your tastes)
- 2/3 cup sour cream (light if counting points or calories)
- 1/3 cup - 1/2 cup hot milk (skim or 2% if counting points or calories)
- 1/2 cup fresh grated parmesan cheese (optional -- substitute with cheddar if your prefer)
- pepper , to taste
Carrot Cake Oatmeal Cookies

1. Stir cookies ingredients in a large bowl until stiff dough forms 2
- Cookie Ingredients
- 1 pouch Betty Crocker Oatmeal Cookie Mix
- 1/2 cup butter or margarine, softened
- 1/2 cup grated carrots
- 1 tbsp water
- 1 tsp ground cinnamon
- 1 egg
- Frosting ingredients
- 4 oz cream cheese, softened
- 1 tbsp butter or margarine, softened
- 1/2 tsp vanilla
- 1 1/2 cups powdered sugar
Rachael's Chicken and Ricotta Meatballs

Preparation Combine the meatball ingredients in a bowl and roll into 2-inch balls
- For the meatballs:
- 2 pounds ground chicken (I prefer 1 pound white meat, 1 pound dark meat)
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon white pepper
- ⅛ teaspoon ground nutmeg
- 1 pound ricotta, well drained
- 1 cup freshly grated Parmigiano-Reggiano cheese
- 1 egg
- ¼ cup chopped flat leaf parsley, ½ cup leaves
- 2 cloves garlic, grated or finely chopped
- 1 tablespoon extra-virgin olive oil (EVOO)
- For the marinara sauce:
- 2 tablespoons extra-virgin olive oil (EVOO)
- 2 tablespoons butter
- 1 small onion
- 3 large cloves garlic
- 3 tablespoons sundried tomato paste
- ½ cup red vermouth or red wine
- One 28-ounce can Italian crushed tomatoes
- 1 teaspoon red chili flakes or ground pepperoncini, ⅓ palmful
- 1 teaspoon dried oregano, about ⅓ palmful
- Garlic bread or pasta, for serving

Baked Zucchini Chips

Preheat oven to 450. Process first 3 ingredients in food processor 10 to 15 seconds or until finely grounded
- 1/2 cup panko (Japanese breadcrumbs)
- 1/4 cup loosely packed fresh basil leaves
- 1/4 tsp kosher salt

- 1/2 lb zucchini, cut into 1/4 inch thick rounds

ROASTED GARLIC BUTTER PARMESAN POTATOES

Preheat your oven to 400ºF (200°C)
- 3 pounds (1.5 kg) baby red potatoes, washed and quartered
- 1/4 cup (60ml) olive oil
- 6 large cloves of garlic finely chopped or minced
- Salt and fresh cracked black pepper
- 1 tablespoon Italian seasoning
- 3/4 cup fresh grated Parmesan cheese
- 1/2 cup unsalted butter
- Fresh chopped parsley, for garnish

- 2 (16oz) cans of cannellini beans or other white beans, rinsed and drained
- 1 cup basil leaves
- 2 tbsp. grated fresh parm cheese
- 2 tbsp. water
- 1 tsp olive oil
- 1/4 tsp salt
- 1 garlic clove, crushed
- 1 tbsp. pine nuts, toasted
- basil sprigs
Chili Cream Cheese Dip

Warm ingredients until blended in a pot on the stove or in the microwave for 1-2 minutes
- 1 (8 oz) block of softened cream cheese
- 1 (15 oz) can of high quality chili ( I like Hormel or Dennison )
