- 3 eggs
- 1 sleeve Ritz crackers, whizzed into crumbs in a food processor
- 1/2 cup grated Parmigiano-Reggiano
- 1 rounded teaspoon smoked paprika
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 20 chicken breast tenders
- Canola oil, for frying
- 1/2 cup ketchup
- 1/2 cup sriracha
- 2 tablespoon dark aged soy sauce or tamari
- Finely chopped scallions, for garnish
- Celery sticks and hot giardiniera (Italian pickled vegetables), for serving
Chipotle Shrimp with Cheddar Grits

Make It Now Directions In a medium pot, cook grits according to package instructions
- 3/4 cup quick-cooking grits
- 1/2 cup shredded cheddar (2 ounces)
- Salt
- 3 tablespoons unsalted butter, divided
- 1 bunch scallions, thinly sliced
- 1 chipotle in adobo sauce, seeded and chopped, plus 1 tablespoon sauce
- 1/2 cup chicken broth
- 1 pound frozen large shrimp (31 to 35), thawed, peeled, and deveined (tails left on)
- 1/4 cup lime juice (from 2 limes)
Marinara Sauce

Heat the olive oil in a large (12-inch) skillet
- 1 tablespoon good olive oil
- 1 cup chopped yellow onion (1 onion)
- 1 1/2 teaspoons minced garlic
- 1/2 cup good red wine, such as Chianti
- 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
COCKTAIL MUSHROOMS

- 1 clove of garlic
- 1/4 c. olive oil
- 2 tbs. wine vinegar
- 2 4oz. cans whole mushrooms, drained.

Preheat oven to 375 degrees
- 1 1/2 to 2 lb. cod
- 3 tbsp. sesame oil
- 2 tbsp. soy sauce
- 1 c. white wine
- 1 bunch cilantro or 1 handful parsley
- 2 scallions, chopped
- 3 garlic, minced
- 1 tsp. ginger
CRAB STUFFED POTATOES

Scrub potatoes well and dry thoroughly

- 4 Medium Idaho potatoes
- 1 6 1/2 oz. Can crabmeat
- 1/2 cup butter
- 1/2 cup light cream
- 1 tsp. Salt
- 1/4 tsp. Cayenne
- 4 tbs. Grated onion
- 1 cup grated sharp cheese
- 1/2 tsp. Paprika
- These may be made in advance, frozen and reheated in hot oven for about half an hour before serving.
