Southwest lasagna roll ups

Cook noodles. Combine ricotta, taco mix, chili, cheese blend, salt & pepper
- 8 lasagna noodles
- 1 14 1/2 can chili con carne
- 4 oz green chilis
- 1 C cheese shredded (Mexican blend)
- 16 oz ricotta cheese
- 1 t taco seasoning mix
- 16 oz salsa
- salt and pepper

Combine all ingredients
- 1 1/2 oz tequila
- 1 oz grand mariner
- 1 1/2 oz simple syrup
- 1 oz fresh lime juice
- 1 1/2 oz blood orange juice
Southwestern shepherds pie

•In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain
- 3 pounds ground beef
- 1 cup chopped onion
- 2 cans (10 ounces each) enchilada sauce
- 2 tablespoons all-purpose flour
- 2 teaspoons chopped chipotle peppers in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2-1/2 cups water
- 2 cups milk
- 1/3 cup butter, cubed
- 1 teaspoon salt
- 4 cups mashed potato flakes
- 2 cans (4 ounces each) chopped green chilies, undrained
- 2 cups (8 ounces) shredded Mexican cheese blend, divided
- 2 cans (11 ounces each) Mexicorn, drained
- 2/3 cup chopped green onions
- Paprika
Pork loin with pineapple, herbs & balamic vinegar

Combine all dry ingredients with one teaspoon olive oil and enough pineapple juice to make a light paste
- 1 t salt
- 1/2 t brown sugar
- 1/4 t black pepper
- 1/4 t sage
- 1/4 t rosemary
- 1/4 t thyme
- 28 oz pineapple chunks
