Shape sausage into 3/4" meatballs
- 3/4 lb. Italian sausage, casings removed
- 1 T. vegatable oil
- 1/2 c. sliced carrots
- 1/2 c. sliced celery
- 1/2 c. green pepper, chopped
- 1 can Campbell's Beef Broth
- 1 can Campbell's Zesty Tomato Soup/sauce
- 1 1/2 c. water
- 1 c. bow-shaped pasta, uncooked

- 4 medium carrots, chopped
- 4 stalks celery, chopped fine
- 1 c. onion, chopped fine
- 3-4 T. butter
- 1 t. minced garlic
- 1 ham bone
- 8 c. chicken broth, low sodium
- 4 c. cooked ham, cubed
- 8- 15.5 oz. cans northern beans, rinsed and drained
Garlic-Bacon Pot Roast

- 3 -3 1/2 lb. beef roast
- 2 T. olive oil
- 6 slices applewood smoked bacon, diced
- 1 1/2 c. coarsely chopped onion
- 8 cloves garlic, smashed

- 2 T. snipped fresh thyme
- 1 T. snipped fresh rosemary
- 3 medium carrots, cut into 2-inch pieces

- 2 teaspoons olive oil
- 1 cup diced onion
- 1 1/2 cups water
- 1 (16-ounce) can fat-free, less-sodium chicken broth
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon black pepper
- 1 (15 1/2-ounce) can chickpeas (garbanzo beans), drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 cup uncooked ditalini (very short tube-shaped macaroni)
- 2 tablespoons chopped fresh parsley
Avocado-Black Bean Salsa

- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen whole-kernel corn, thawed, or fresh corn kernels (1 ear)
- 1 (14.4-ounce) can fire-roasted diced tomatoes, with juice
- 2 garlic cloves, minced
- 1/4 cup packed fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 2 tablespoons avocado oil or light olive oil
- 1 teaspoon ground cumin
- 1 teaspoon minced canned chipotles in adobo sauce
- 1/2 teaspoon salt
- 2 avocados, diced
- Tortilla chips
Sunflower 'N Pasta Salad

- 1 12 oz. pkg. dry farfalle (6 cups prepared)
- 1 1/2 c. Lunds/Byerly's Parmesan Dressing, divided
- 1/2 c. salted sunflower nuts
- 1/2 c. thinly slice celery
- 1/3 c. real bacon bits
- 1/2 c. sliced green onions, including some tops
- 3 T. diced pimento
- 1/4 c. shredded Parmesan cheese
Ham Salad

- 2 c. finely chopped ham
- 1/2 c. Miracle Whip
- 1/2 c. finely chopped celery
- 2 T. finely chopped onion
- 1 t. prepared mustard
Beef Stroganoff Stir-Fry

1. Toss steak with paprika, 2 t
- 1 1/2 pounds skirt or flank steak, cut into 1-inch pieces
- 1/2 t. smoked or sweet paprika, coarse salt and ground pepper
- 2 T. vegetable oil
- 1 medium red onion, thinly sliced
- 1 pound sliced cremini mushrooms
- 3 T. chopped fresh parsley
- Cooked, butterd egg noodles and sour cream, for serving

- 1 pkg. rigatoni pasta
- 3 T. olive oil
- 2 cloves garlic, minced
- 1 large red pepper, chunked and sauteed
- 1 26 oz. jar of your favorite pasta sauce
- 2 T. parsley, chopped
- 1/4 c. grated Parmeson cheese
